Baked Oatmeal for One

Hi it's me. It's been a while again. I'm back with a cool, quick recipe that is wonderful to sweeten up your breakfast. I tend to eat the same thing for breakfast alot and I'm trying to incorporate more oats in my diet (that soluble fiber!!). I whipped this up after seeing some IG recipes that were very inspiring and motivating.  1 mashed banana 1/2 cup oats (I use quick cook) 2 tbsp of peanut butter powder + water to mix (or use peanut butter) 2 tbsp of semi-sweet vegan chocolate chips Mix the peanut powder with the water and make peanut butter. Only add a little water at a time. Mash the banana in a small glass dish. Mix in the oats and peanut butter than add the chocolate chips. Mix well until a batter, smooth over and bake at 350 degrees for 10-13 minutes. The finished product will be cake-like. Enjoy right away. I washed it down with some soy milk.

Dark Chocolate Vegan Protein Brownies

It's been a minute since I updated this blog and it's a miracle it's happening now! I just made some brownies and wanted to share with you. I'm also on a roll writing my novel so might as well get some blogging done too. These brownies are so ooey gooey good and I think you will like them. I usually link this blog in my Instagram stories but also check the brownie photo caption tomorrow and there will be a list of ingredients in case you want to run to the store. I had chocolate caramel protein powder in my cabinet but no worries if you don't have protein powder, you can use more coconut sugar. We also use cocoa powder for this recipe as well so your brownies will be plenty chocolatey. Add in some chocolate pieces and you have a very rich brownie. It's great to be back!! I had to reset my password to sign on here 😂 It's been soooo long. I'm halfway through my supervision hours for my clinical social work license, I just renewed my lease and they did NOT raise my rent a crazy amount and I'm working more on my fiction novel. No Bake, 7 Minute Granola Bars

Hi!! It's been a little bit but not as long as last time. I whipped up these granola bars last night in under 7 minutes and I let them set in the fridge overnight. They are amazing. This recipe makes 10 bars and requires no small kitchen appliances. 

Baked Peanut Butter Apple Oatmeal

You make this dish like you would stove-top oatmeal so if you don't mind turning on your oven, this will be the perfect breakfast (or dessert, I'll show you how to dress it up!) I have a good amount of green apples from my Misfits Market delivery (use code COOKWME-YJ5BBF for 30% off your first order) so what better way to use them than for making a baked dish. Apple pie was too complicated for today so I pulled out the oats. Adding maple syrup is totally optional but I love the sweet touch that it gives the dish. I love how the apple bakes covered in the maple syrup too. You can also add water instead of the milk and then add a little coconut cream to give it a thicker, creamier texture. Also add cut up medjool dates or another fruit such as blueberries. 

Blueberry Banana Protein Bread

. Have you ever baked with flavored protein powder? I have and I've never liked the taste. Some protein powders just aren't meant for baking, the final product tastes...off. I have tried quite a few plant-based protein powders over the years and I haven't settled on one...until now. And the particular flavor I use in this bread replaces actual bananas. It's a strong, delicious banana flavor. I think the banana flavor is stronger than the peanut butter flavor. No Bake Lemon Coconut Cookies

Do you know why I love Instagram? Because I get recipe ideas...and this was no exception. I saw some coconut bars on the gram and this recipe popped into my head. I didn't use all the same ingredients; just coconut; then decided I was in a lemon mood. And so these cookies came to be. No oven is required; they took 7 minutes to whip up and they are so delicious. How are you all getting through this isolation? Are you cooking and baking? I'm having fun and keeping busy but I won't deny that I have a few days of anxiety and feel very uncertain about the world. Pumpkin Cupcakes with Lemon Buttercream icing

My stress eating during this pandemic is slowing down (yay, I only had one of these cupcakes after I made them) but I still have the urge to bake. These cupcakes are amazing and I used my usual icing for them (get lemons or lemon juice!) Other than that, I am just taking one day at a time during this period of isolation and trying to put good food in my body and move everyday (mostly weight lifting) You should have all the ingredients for these cupcakes in your pantry but I also added a cool unusual ingredient: blackstrap molasses. It goes so well with pumpkin and it has a great amount of iron in it...and I want to use it up. You don't need to add the molasses but I like the subtle taste. I also used powdered sugar because I had no other sweetener but feel free to use coconut or brown sugar. These cupcakes turn out pretty moist and springy and taste great with and without the icing.

Chocolate Chip Cookie Sandwiches with Pink Buttercream Icing {A February Recipe}

I don't ever really celebrate Valentine's Day; February is usually busy with my Dad's bday, my sister's and my bday. But I do love some VDay desserts and I do enjoy sending my niece a Valentine's Day card. But is it a Hallmark holiday? Yes! I also love pink and dark chocolate so I'm going to give Valentine's desserts a 10. They are fun and delish and it's nice to give treats to your loved ones. I love making buttercream icing and I'm currently obsessed with Trader Joe's dark frozen cherries ever since I bought them to have as a snack (frozen cherries are fun to eat). I also love the super dark, amazingly beautiful cherry juice they have when they begin to melt and I thought coloring some icing would work well...it definitely did. You can also color icing with strawberry juice, blueberry juice, even beet juice although I wold reach for a fruit first. You only need a little juice, mix and there you have a glorious pink icing. No Bake Chocolate Peanut Butter Hemp Cookies

I don't really make a ton of desserts anymore since watching how much carbs I'm consuming but I have relaxed a little bit with it and just make sure I don't consume added sugar. I wanted to make a low carb cookie though for something to snack on as I'm usually running around all day. I try to bring a protein bar or some kind of snack to give me energy and keep my stomach from growling. These turned out delicious and they are no bake!

Chocolate Peanut Butter Cookies Bars

Sorry for the lack of posts-this blog has been on the back burner as life has happened this past month and a half. I haven't been inspired to make recipes-actually dessert recipes since this blog is pretty focused on that so I haven't logged on. But I just made these amazing bars last night after I made dinner for my friend and I and by the time I was finished it was pretty late. It didn't take long to make these, though, and then you just leave them in the fridge to set.

PB&J Protein Bites (No Added Sugar, Vegan, Gluten-Free)

Hey readers! It's been a while, I know. I have been so busy between the holidays and the new year, my yoga studio and some other things. What have you been up to? I want to get back to posting more recipes and taking lots of pictures so my goal for 2019 is to write for you more! I made this new recipe yesterday for breakfast and these are just the yummiest before-a-workout treat or a quick breakfast. I didn't add any maple syrup or sweetener but these end up being so sweet due to the raisins and raspberries.

Chewy Energy Bars (no added sugar, vegan, gluten-free)

Energy bars with lot of fiber, minimal sugar and high protein are a great snack. I grab and just go and I feel full for the time that I'm out and about and I need to get things done. I love a few brands of energy bars but I also love making my own-it's easy to choose what ingredients go in them and you can make a bunch and freeze These particular bars are without sugar by default since I ran out of maple syrup. They are still so delish!

Blueberry Banana Loaf

This loaf is free from added sugar and oil. It's butter-free and is sweetened with fruit. It's vegan and gluten-free. Serve for breakfast or for a sweet treat and enjoy a delicious, nutritious bite.

4 Ingredient Caramel Oatmeal Cookies

I started my 30 day trial of Prime Pantry and I ordered dates so of course I had to make caramel. These aren't the decadent medjool dates from Trader Joe's but the smaller California dates that are perfect for raw desserts. I'm trying a new thing this year-buying everything I need to eat from the farmers market and buying staples like rice and beans on Amazon. That way most of my money is spent on greens, potatoes, tomatoes and fruit from local, organic farms. Plus it's just too hot sometimes to lug bags from the grocery store in the sweltering heat!

Three Sweet Treats that I'm Loving Lately

Maybe I should make this a dessert blog. I love pulling out my food processor or hand mixing desserts in my favorite glass blue bowl and then having a sweet treat for any time of day. My desserts are usually healthy enough to eat for breakfast or for before a workout. I try to add as little sweetener as possible or I use fruit like dates or bananas to sweeten a dessert. Peanut Butter Flax Protein Bites

Here is a quick snack for you and something I've probably made and posted a hundred times before this. These bites are made with protein powder that is sweetened with stevia so these are pretty much sugar-free, full of fiber and healthy fat. Coconut Flax Granola

I just got back from a trip to Whole Foods and while I was there I was hanging out in front of some granola that was on sale, pondering whether or not I should get it. I then thought of the oats I still had at home and I thought, oh yeah I can make granola. I love granola in yogurt, which I plan on having for lunch. So, now that I'm home, there is granola in the oven and omg it smells great! I made the granola pretty light and simple, choosing to omit nut butter. I added some amazing, nutritious ingredients and some maple syrup and that was it. This took a second to whip up. Granola is awesome for just about anything, top your yogurt with it, take a handful in a bag for a snack, put on top of ice cream, eat as cereal with milk, it's a great source of energy and you can add any healthy ingredient you wish. You can experiment with the sweetener as well so feel free to use brown rice syrup or agave instead of maple syrup. I just love maple syrup! So, use my recipe here a
