Blueberry Banana Protein Bread


.Have you ever baked with flavored protein powder? I have and I've never liked the taste. Some protein powders just aren't meant for baking, the final product tastes...off. I have tried quite a few plant-based protein powders over the years and I haven't settled on one...until now. And the particular flavor I use in this bread replaces actual bananas. It's a strong, delicious banana flavor. I think the banana flavor is stronger than the peanut butter flavor.

I've made this bread so many times, with a few changes here and there but it always turns out to be moist and delicious. If you don't have flour, no worries, use oats to make oat flour. Don't have baking powder or baking soda (because literally no one seems to have any), no worries, I actually don't use either. You can use banana for an egg replacer or not. I added blueberries but if you don't have any, add blackberries or just switch right to chocolate chips. This bread needs only a short time in the oven and you've got a perfect sweet treat to drink with your coffee or tea.


If you want to try a new protein powder, I used Tru Supplements Peanut Butter Banana Cupcake protein powder for this recipe. The banana flavor is super strong so you don't really need a banana for this recipe unless you want to use it as natural sweetener or for your egg replacer. I've also tried their birthday cake flavor, chocolate and vanilla. They have a regular line of powders and a dessert series (peanut butter banana cupcake is a dessert flavor). Try a flavor that you can add to baked goods.



I plan on trying all the flavors that Tru has and then I can settle on one or two. I also like that I've found a protein powder that I love in baked goods, smoothies and mixed with milk.

1.5 cups of oat flour (rolled oats in your food processor)
2 scoops of Tru Supplement peanut butter banana cupcake protein powder
2 tsp of sea salt
3 tbsp of brown rice syrup
1 tsp of apple cider vinegar + 4 tbsp of nondairy milk
2 tbsp of olive or avocado oil
1/2 cup of unsweetened soy milk
1/3 cup of blueberries

Place the oats in your food processor and process until they turn into flour. Mix the apple cider vinegar and 4 tbsp of milk together and let sit. Add the sea salt and protein powder to the food processor and keep processing. Add the rest of the ingredients except the 1/2 cup of milk. Process into a batter and slowly add the milk. You want the batter to be thick but easily mixed. If you need to thin out the batter, add more unsweetened soy milk. Use some oil to coat a glass loaf pan and pour the batter in. Mix in the blueberries and smooth out the batter. Bake at 350 degrees for 15-20 minutes or until the middle is done. Cool, cut and serve. You can add buttercream icing or cream cheese icing or nix the icing.
