Baked Oatmeal for One

Hi it's me. It's been a while again. I'm back with a cool, quick recipe that is wonderful to sweeten up your breakfast. I tend to eat the same thing for breakfast alot and I'm trying to incorporate more oats in my diet (that soluble fiber!!). I whipped this up after seeing some IG recipes that were very inspiring and motivating.  1 mashed banana 1/2 cup oats (I use quick cook) 2 tbsp of peanut butter powder + water to mix (or use peanut butter) 2 tbsp of semi-sweet vegan chocolate chips Mix the peanut powder with the water and make peanut butter. Only add a little water at a time. Mash the banana in a small glass dish. Mix in the oats and peanut butter than add the chocolate chips. Mix well until a batter, smooth over and bake at 350 degrees for 10-13 minutes. The finished product will be cake-like. Enjoy right away. I washed it down with some soy milk.

No Bake, 7 Minute Granola Bars

Hi!! It's been a little bit but not as long as last time. I whipped up these granola bars last night in under 7 minutes and I let them set in the fridge overnight. They are amazing. This recipe makes 10 bars and requires no small kitchen appliances. 

Vanilla Pumpkin Chia Seed Pudding

Pumpkin is so delicious. It's especially delicious in this recipe. You can taste the vanilla flavor but I love the pumpkin flavor bursting through. I had this for breakfast today and it was a super simple recipe.

Blueberry Banana Protein Bread

. Have you ever baked with flavored protein powder? I have and I've never liked the taste. Some protein powders just aren't meant for baking, the final product tastes...off. I have tried quite a few plant-based protein powders over the years and I haven't settled on one...until now. And the particular flavor I use in this bread replaces actual bananas. Plant-Based Protein

This fall, I began counting my macros and focusing on increasing my protein so that I could start to really build muscle. I hadn't sat down and concentrated on planning out protein filled meals so it took some getting used to. And I also realized that if I didn't think about what I was eating, I would reach for sugary, carb heavy foods. Plant-based protein...that's what this blog post is all about. Chocolate Chip Brownie Bites

When I crave sweets, I look for ways to minimize my sugar consumption while also getting that sweet fix. I recently discovered monk fruit sugar so my coffee and sweets have never been the same. It's a great substitute for regular sugar but it has no impact on your blood sugar and has no carbs. I didn't use monk fruit sugar for this recipe, though, so go out and get it because my next recipe will have it.

How to Make Fluffy Basmati Rice

I'm always and forever trying to make rice like they make at Indian or Persian restaurants. It's so delicious, fluffy and flavorful and I love the texture of basmati rice. So, I was talking to a friend who makes rice alot and he helped me with the recipe. The idea is to sautee the rice first and add ingredients that will give it flavor such as garlic, onion, spices etc. I serve the rice with beans or tofu, either sauteed or in a curry sauce. Rice is just so amazing, it's simple but nutritious and is a great alternative to bread or other grains.

PB&J Protein Bites (No Added Sugar, Vegan, Gluten-Free)

Hey readers! It's been a while, I know. I have been so busy between the holidays and the new year, my yoga studio and some other things. What have you been up to? I want to get back to posting more recipes and taking lots of pictures so my goal for 2019 is to write for you more! I made this new recipe yesterday for breakfast and these are just the yummiest before-a-workout treat or a quick breakfast. I didn't add any maple syrup or sweetener but these end up being so sweet due to the raisins and raspberries.

Easy Homemade Vegan Cinnamon Buns

Ok, ALMOST homemade, I used store bought dough from Trader Joe's. The filling and the icing is homemade, though. These are so delish, I can't even tell you and when you make them at home, you can control what ingredients go into them so they are somewhat healthy. These were inspired by the cinnamon buns sold at Trader Joe's-I buy them all the time when I go home and me, my mom and my niece chow down on them. Next up: homemade pumpkin cinnamon buns!

Vanilla Banana Muffins

I wasn't buying oats for a while because I needed a break from them (I know, crazy right?). Sometimes when I have a copious amount of oats, I bake and bake and make loads of oatmeal and then I'm all sugared out. I figured I would take a break from buying them for a while so I can chill with the sugar. I bought some oats the other day again and I decided to make these muffins last night. They are so delish and ended up perfect and I had one this morning for breakfast.

Chocolate Pound Cake

I saw a chocolate pound cake at the farmers market this morning and was about to get it. It was a small piece and it was $5 and I wondered if all the ingredients were organic and non-GMO so I put it down and decided to make my own. I had all the ingredients at home except for enough sugar so I had to use a little confectioner sugar and maple syrup instead of coconut sugar. I always use maple syrup or coconut sugar because they are more natural, not as processed sources of sweetener. But you gotta use what you have!

Dark Chocolate Protein Bites

I think it's pretty obvious that I love chocolate bites. They are wonderful when you want to make something sweet and you don't have alot of time and you want something that will render leftovers. I was home over the weekend and I brought back some food including raisins. I can't say I tend to snack on raisins so I used them for this recipe. Also, I CAN'T LIVE WITHOUT PROTEIN POWDER! I came home to a brand new container and I'm pretty psyched.

Vanilla Protein Superfood Bites

I haven't made snack bites or snack bars in a while because I devour them with no thought whatsoever. This time I made these bites and ate them over the course of three days, which is good for me. They are high in protein, though, because I didn't use dates, I had to use more of the liquid sweetener than I wanted to but oh well. Speaking of dates, not one has passed through my lips since February. They are just too many calories to deal with and very binge-worthy for me.

Yogurt with Oats and Fruit

It would be cheaper and I can expand my skills in the kitchen but I haven't yet and end up buying yogurt and cheese. It's cool though because I get to try different brands, check out ingredients and get inspiration for my own recipes. I actually just ordered a vegan yogurt starter kit on Amazon so I'm going to try to make yogurt first.

I'm running low on dried fruit which is essential for making raw crusts so tonight I said good bye to my bag of dried cranberries with this amazing recipe. These bars are delish, sweet and full of vanilla flavor with the added fiber of oats. There are very few ingredients and in no time you will have a very cool snack.

I have tried pancakes in 100 different ways, it seems, so I'm just going to add to the list today. I usually make pancakes with a mushed banana but I had tofu last week and I replaced the banana with tofu....and it was so delish. And high in protein. Tofu is cool. You can make tofu scramble, bake with it or even make tofu cheese.

Plant-Based Breakfast Ideas

I am pretty obsessed with yogurt; I guess because I love that I love the unsweetened yogurt. The unsweetened yogurts are great because they still have that yummy, creamy yogurt taste but without the added sugar. I'm trying to branch out and not buy the same brands and tonight I bought a cashew milk yogurt that I'm psyched to try. Tomorrow morning is going to be a pretty epic yogurt bowl.

When I do compilation posts, it's always a wonderful trip down memory lane. I love to see how my photography improved or how different I lay out my posts. I also love to see how my cooking has changed and what foods I was obsessed with two years ago. I love to see how I've grown and I start planning ways to improve my blog even more.
