Coconut Yogurt Chia Seed Pudding

I'm changing up the chia seed pudding and adding coconut yogurt. It makes for thicker and richer pudding and it's healthy. I bought blueberries today, I've been thinking of them for a week now. I miss fresh berries in the winter, I can't wait until Trader Joe's has organic berries and has them on sale :)

Chia seeds, blueberries, a banana and vanilla almond milk.
1 individual container of vanilla coconut yogurt
1/4 cup of almond milk
2 tbsp of chia seeds
1 banana
1/2 pint of organic blueberries
I made this pudding in a small glass bowl. Put the yogurt, chia seeds and almond milk in the bowl and stir. Slice the banana and add the blueberries on top. Cover and refrigerate.

  1. I like the cocobut yogurt substitution. Is the tortilla gluten free?

  3. No, it's not GF...I think the only GF torillas at Trader Joe's are the brown rice ones and the corn ones....I wish I liked the brown rice but they end up being too hard and they crumble. LOL at your second comment :) You must try the coconut yogurt!
