Chia chia! I love me some chia seeds. They are full of omegas, fiber, healthy fat and energy, this is a great snack before a run or a middle of the day pick me up.This is also a great snack if you are craving sweets like I do. My cupcake craving is quickly satisfied with this bowl of goodness.
Ingredients:
3/4 cup of light coconut milk
1/4 of chia seeds
2 tbsp of maple syrup
2 tsp of vanilla extract
2 tbsp of almond butter
Combine your milk and chia seeds in a mason jar and mix well. Add the maple syrup, vanilla extract and almond butter and mix well again. Put the lid on the mason jar and store in the fridge overnight. The next morning the chia seeds will have soaked up alot of the milk and it will be a nice pudding consistency. I can't stress how yummy this is!
