Cherry Coconut Bliss Balls


I saw this recipe on IG and then changed it.  I haven't made a raw dessert since Easter when I made thisrawesomelife's lemon cheesecake...that was totally divine if I may say so myself :)  So, I whipped these up in under 5 minutes and froze them (they are actually fine in the fridge too).


These are great if you just need something sweet to pop in your mouth.  I first tried this recipe a few weeks ago and I made it into an ice cream sandwich with raspberry nana ice cream but I changed the recipe and just made them into balls this time.  Check out my IG for more pics of my food!  IG: thefabulousvegan

You can use any nuts you want in this recipe and you can use a few different liquid sweeteners but just made sure they are thick and syrupy (agave, brown rice syrup, barley syrup).  I also added cherries this time and they turned out great.  All you need are your ingredients and a food processor.
These sweet poms poms are great for summer; just be sure to keep them indoors especially on a hot summer day; they will begin to melt and fall apart.  What better way to use coconut in a recipe?

Cherry Coconut Bliss Balls:
1 cup of shredded unsweetened coconut
1/2 cup of nuts (I used walnuts) 1/4 cup of agave or brown rice/barley syrup
2 tsp of vanilla extract
About 10 cherries (pit them first!)

How easy is that ingredient list?  Combine all ingredients in your food processor and process on high. Scoop out and form into ballas. Refrigerate or freeze. This recipe makes about 10 balls depending on what size you make them.
