Baked Oatmeal for One

Hi it's me. It's been a while again. I'm back with a cool, quick recipe that is wonderful to sweeten up your breakfast. I tend to eat the same thing for breakfast alot and I'm trying to incorporate more oats in my diet (that soluble fiber!!). I whipped this up after seeing some IG recipes that were very inspiring and motivating.  1 mashed banana 1/2 cup oats (I use quick cook) 2 tbsp of peanut butter powder + water to mix (or use peanut butter) 2 tbsp of semi-sweet vegan chocolate chips Mix the peanut powder with the water and make peanut butter. Only add a little water at a time. Mash the banana in a small glass dish. Mix in the oats and peanut butter than add the chocolate chips. Mix well until a batter, smooth over and bake at 350 degrees for 10-13 minutes. The finished product will be cake-like. Enjoy right away. I washed it down with some soy milk.

Sweet Potato Pancakes (vegan, dairy-free, egg-free)

If you already have sweet potatoes steamed in your fridge, this recipe is a breeze. You don't even need your food processor or anything special, just a bowl, a fork and a pan. The sweet potato in the recipe adds complex carbs, sweetness and fiber to a pretty simple pancake recipe. I'll get right to it below.

Blueberry Banana Protein Bread

. Have you ever baked with flavored protein powder? I have and I've never liked the taste. Some protein powders just aren't meant for baking, the final product tastes...off. Vanilla Banana Muffins

I wasn't buying oats for a while because I needed a break from them (I know, crazy right?). Sometimes when I have a copious amount of oats, I bake and bake and make loads of oatmeal and then I'm all sugared out. I figured I would take a break from buying them for a while so I can chill with the sugar. I bought some oats the other day again and I decided to make these muffins last night. I haven't said wow and wanted to jump on the phone with someone about a smoothie in a while. This is that time. Adzuki Bean Brownies with Chocolate Icing

Yo, these are so good, people! Fudgey and chocolately. They are also super healthy. I love using beans in place of flour because you're getting lots of fiber and protein along with a sweet treat. This recipe is made completely with whole, plant-based ingredients, nothing processed or artificial. I recently made adzuki bean soup a few posts down so check that out too.

Peanut Butter Vanilla Oat Milk Smoothie

I love trying new plant-based milks even though I usually buy West Soy unsweetened soy milk. I go for milks that have the least amount of ingredients and are organic. West Soy unsweetened plain soy milk is organic soybeans and water. Beautiful. If I don't buy milk, I make it myself, either almond or oat milk. Yesterday I bought oat milk and it is DELICIOUS!

Vanilla Protein Milkshake

It's super warm today but I must say it's not as bad as I imagined. My apartment is not really that warm and I haven't needed anything beyond a fan all day while I was typing, emailing, updating websites and writing newsletters. But I think tomorrow is supposed to be 90 in NYC so I figured I would bust out an ice cream recipe.

Today is an awful day for pictures. It's STILL overcast and rainy and I'm so glad I ran last night. Speaking of a run, everytime I run around my neighborhood, I appreciate how lucky I am to live here on the Upper East Side of Manhattan. It's quiet, calm, close to everything (thanks Q train!) and bustling with restaurants, shops, Central Park and many other cool places to run. I found myself loving all of that last night in between epic humidity and raindrops. So, anyway, this parfait. I ate this before my coffee this morning, how could I not?

Chocolate Peanut Butter Cookie Ice Cream

My peanut butter craze reached an all new high the other day and it got so bad I swore off of it for 3 whole days. I can eat peanut butter several times a day everyday, if I let myself, which I did this past week. It's so damn good; I mostly prefer the Whole Foods 365 brand, there is just nothing quite like it. Maybe I should stop buying that brand and go with one I don't prefer so I won't go reaching for peanut butter every chance I get. Why it is so addicting?!

Three Ingredient Fudgy Brownies

These brownies did not come out of my brain as they are not my recipe. I found the recipe on instagram under @lilsipper. Her account is so so cool; she makes very cool, delicious looking food, mostly desserts, using very interesting ingredients and ingredients you would not think to use. Banana Bread

I wanted to make a recipe that would fill my apartment with a lovely, cinnamon, pumpkin, sweet smell that is tis the season. I'm obsessed with pumpkin pie spice and cinnamon and nutmeg and all things fall. This bread is gooey and warm and filling and pretty healthy. I'm such a huge fan of oat flour, which is simply quick oats in the food processor. I tried not to eat alot of this but I dug in after it came out of the oven.

Antioxidant Packed Smoothie for Recovery and Restoration

I've done research and I've read plenty of articles about the healing powers of fruit, veggies and some spices. I just finished an article this morning on how easy it is to incorporate lemon juice, turmeric and ginger in your everyday diet. Raw Pea Protein Chocolate Smoothie

Pea protein is the new ingredient that is added to protein powder and smoothies, I'm just realizing. Am I late to the game? I feel like I always overlook peas as being boring or something I used to be made to eat as a kid but they are actually pretty awesome. I bought frozen peas yesterday at Whole Foods so I could make a smoothie today and I wasn't disappointed. To make the sweetest smoothie with bananas, make sure you use super ripe, speckled bananas, as ripe as you can possibly buy. The riper the banana, the sweeter the ice cream.

Smoothie for Sore Muscles

Let me start out by saying that I'm not a doctor or a registered dietitian so I cannot cure your sprains, strains, muscle soreness etc with anything I say on this blog. I can only speak from my own experience about how foods effect me so please ask a nutritionist if you need clinical facts about food. It always seems to come down to the same foods when you're having a problem like muscle cramps, feeling down, detoxing, feeling too tired: berries, cinnamon, nuts and seeds. These foods have antioxidant properties and help reduce inflammation. So, whatever issue you are having, you may already be eating the ingredients that are in this smoothie. Just eat healthy, whole foods and you will probably end up feeling your best!

Nice Cream Recipes

Ice cream is a summer essential, it's a part of my diet almost everyday and since I'm vegan, I don't have to worry about filling my body with crappy dairy and insulin spiking sugar. I make mostly banana nice cream but I also made coconut milk gelato a few times and loved it; it's a decadent treat so when consuming dairy free treats on a regular basis, I would stick to mostly banana ice cream. No hate for coconut at all but it's high in fat so maybe consume in moderation? I don't know I'm not you so do whatever you wish, whatever is best for you body :)

Homemade Blended Coffee Smoothie

I don't drink coffee often because 1) it's expensive and I always want a latte and 2) I'm sensitive to caffeine. But I do get cravings for it sometime because, with sweetened milk, it can be pretty tasty and I love the comfort and yumminess that comes with it. I have a new coffee shop across from my apartment so now it's that much easier to want coffee and lately I've given into my cravings.

A Few Things I'm Loving Lately + Two Summer Recipes

This long Memorial Day weekend has been just lovely, spending time with friends and eating good vegan food. It's super hot in the city so running was a challenge today but I did it and followed it with an awesome strength workout. So while I savor this long weekend and reflect on just how lucky I am and how beautiful this life is, I want to share a few more things I'm loving lately!! Oh and be on the lookout for my next recipe, cauliflower mac and cheese. Oh yeah!

Things I love lately + Giveaway Reminder

I've been hitting the keys lately writing and blogging (I'm working on a fiction novel) and enjoying life in the big city. First off as you can see, I renamed my blog and I'm LOVING it! Fabulous Fit Food just didn't sit well with me, I found myself disliking it alot and the last couple weeks I have thought about what I want to rename this blog. I can't believe how many ideas I had and how many of my ideas were already taken by bloggers, Youtubers and health and wellness coaches. It got kind of frustrating so finally I just stopped thinking about it so much. I went home for my niece's 1st bday and just let go of the blog a little bit.
