Sweet Potato Pancakes (vegan, dairy-free, egg-free)


If you already have sweet potatoes steamed in your fridge, this recipe is a breeze. You don't even need your food processor or anything special, just a bowl, a fork and a pan. The sweet potato in the recipe adds complex carbs, sweetness and fiber to a pretty simple pancake recipe. I'll get right to it below.

1/2 cup of all purpose flour

1/2 cup of mashed sweet potato, peeled

1/2 small banana

1/2 cup + 2 tbsp of canned coconut milk

It's easy to remove the skin from sweet potato so just peel it off and place the flour, sweet potato and banana in a medium bowl. Mash the sweet potato and banana with a fork and mix with the flour. Add the milk slowly so that the batter is thick but not too thick. If you add too much milk and it's too watery, add more flour.

Once the batter is mixed, place butter or coconut oil in the bottom of a pan and turn the heat on low. Pour the batter into the pan in pancake shapes and wait until the pancake batter bubbles, then flip the pancake. Once the pancake is cooked on both sides, place on a plate and serve. Top with non dairy butter and/or syrup.
