Yo, these are so good, people! Fudgey and chocolately. They are also super healthy. I love using beans in place of flour because you're getting lots of fiber and protein along with a sweet treat. This recipe is made completely with whole, plant-based ingredients, nothing processed or artificial. I recently made adzuki bean soup a few posts down so check that out too.
They say that adzuki beans are good for your kidneys. One cup of adzuki beans, which is what I used for this recipe, gives your body 17g of protein, 16g of fiber, a ton of folate and 35% of your potassium for the day. Can you imagine getting all of that while eating a brownie? Way better than flour! Although, I will say I love baking with oat flour so I'm not totally dissing flour.
I whipped these up last night, tried them (as you can see from the photos) and then had 2 for breakfast this morning. After this, I'm going to go work out. There are not alot of ingredients for this recipe and most you probably already have in your kitchen. When I took these out of the oven, the middle looked almost not baked but as they cool, the inside of the brownies harden and become fudge-like, so don't worry.
Brownies
1 cup of cooked adzuki beans
1/4 cup of maple syrup
1 very ripe, very brown banana
1/4 cup of cocoa powder
1 scoop of chocolate protein powder
1/4 cup of natural peanut butter
1/4 cup of non dairy milk (to thin out the batter)
Icing
1/2 avocado
1/4 cup of cocoa powder
5 tbsp of maple syrup
A splash or two of non dairy milk
Set aside your milk and put all the other ingredients in your food processor. Process on high, pausing to scrape down the side of your food processor as needed. Add the milk to keep it going. Taste the batter and if you need to, add a little more maple syrup. If you want a darker chocolate batter, add more cocoa. Process until the batter is smooth. Spray a small square glass dish with oil and pour the brownie batter in, spreading it out evenly. Bake at 350 degrees for about 35 minutes.
Put the icing ingredients in your food processor and process until smooth and creamy. Adjust the chocolate degree to your liking, add more cocoa powder if you want dark chocolate icing. Wait for the brownies to completely cool than ice them. Cut and serve. Keep the brownies refrigerated.
