Dark Chocolate Vegan Protein Brownies

It's been a minute since I updated this blog and it's a miracle it's happening now! I just made some brownies and wanted to share with you. I'm also on a roll writing my novel so might as well get some blogging done too. These brownies are so ooey gooey good and I think you will like them. I usually link this blog in my Instagram stories but also check the brownie photo caption tomorrow and there will be a list of ingredients in case you want to run to the store. I had chocolate caramel protein powder in my cabinet but no worries if you don't have protein powder, you can use more coconut sugar. We also use cocoa powder for this recipe as well so your brownies will be plenty chocolatey. Add in some chocolate pieces and you have a very rich brownie. I hope everyone is having a wonderful new year and is continuing to recover from this pandemic in any way you need to. I can't believe it's been three years exactly since the world shut down and seemingly changed f

Three Sweet Treats that I'm Loving Lately

Maybe I should make this a dessert blog. I love pulling out my food processor or hand mixing desserts in my favorite glass blue bowl and then having a sweet treat for any time of day. My desserts are usually healthy enough to eat for breakfast or for before a workout. I try to add as little sweetener as possible or I use fruit like dates or bananas to sweeten a dessert. These are my latest creations:

Chocolate Peanut Butter Brownie Slices

Ok, so I no sooner posted about not doing much in the kitchen when I got busy making these brownie bars. The first bite you take tastes like raisins and peanut butter but as you get chewing, you can taste the chocolate and chewiness. I love any dessert you can just whip up in your food processor and then freeze.

Dark Chocolate Pumpkin Brownies with Chocolate Peanut Butter Icing and my Supper Club

These are super fudgy...so if you like super fudgy, soft brownies, make these. I used pureed organic pumpkin and baked them for at least 30 minutes but they are still fudgy. That's fine with me, by the way! These brownies are a wonderful sweet treat that is also flour-free and can be made with different nut or seed butters. Oh and along with this recipe, I also have my Supper Club announcement!

Dark Chocolate Avocado Brownies with Cream Cheese icing

My apartment smells like chocolate. It's Halloween as I write this and I just pulled these brownies out of the oven. As you can see, I'm really diggin fall. I'm absolutely loving how these brownies turned out (the second time) and I'm loving the fact that I'm writing this blog post about one of my favorite plant-based companies. This post is sponsored by Go Veggie but all opinions and run-on sentences are mine, all mine.

Adzuki Bean Brownies with Chocolate Icing

Yo, these are so good, people! Fudgey and chocolately. They are also super healthy. I love using beans in place of flour because you're getting lots of fiber and protein along with a sweet treat. This recipe is made completely with whole, plant-based ingredients, nothing processed or artificial. I recently made adzuki bean soup a few posts down so check that out too.

Three Ingredient Fudgy Brownies

These brownies did not come out of my brain as they are not my recipe. I found the recipe on instagram under @lilsipper. Her account is so so cool; she makes very cool, delicious looking food, mostly desserts, using very interesting ingredients and ingredients you would not think to use. For instance, this recipe is just fruit and cocoa powder and it makes the most delicious brownies. So, if you are on instagram or Facebook, follow @lilsipper. Her Facebook is @lmLilSipper.

Red Bean Brownies

People on my mailing list already received this lovely recipe in their inbox so if you wanna join, click above and get my newsletter! These bean brownies were fudgy and gooey and totally delicious. They are that kind of dessert you drool over in pictures. I think I may have slightly undercooked them when I tested this recipe but they ended up completely fine and something I definitely would have served to others. Besides, I've never heard anyone complain about brownies being too gooey?!

Sweet Potato Brownies

I'm so sorry I have not updated this blog in a minute, I have been so busy getting back into the swing of life since coming back to the city after New Years. I'm pretty much kicking alot of butt-I have my mailing list up and running, I sent out my second newsletter this week and I added a mailing list popup link to my website. I ran my first New York Road Runner race on Saturday (a 10K) in the snow and freezing cold and I got through my first week of eating clean and I'm down two pounds. Want to join me? Sign up for my Intro to Plant-Based Eating Fb group! We begin Monday January 16th but the grocery list goes out this Friday!

Brownies with Raw Chocolate Icing

These brownies are pretty amazing.  I wanted icing to put on them and I made it raw so all sweetness is from fruit. This is the same recipe I made a few months ago with almond flour however I made these brownies with oat and coconut flour. They are no sugar, no fat brownies.

Almond Flour Brownies

I figured out a good recipe for all the almond flour I have. I love making almond milk but the leftover almond meal sometimes drives me crazy! I also wanted something yum to top my overnight oats. So I thought...brownies!! Right now I'm eating my oats and it's very sweet and chocolatey, I'm thinking about saving the rest of the oats for tonight's snack. These brownies are not perfect; they're crumbly and they fall apart easily. But they're good and pretty healthy and they're perfect to top your oats or add to a smoothie.
