Creamy Peanut Butter Mousse

Vegan peanut butter mousse. It's so delish and can be enjoyed any time of the day. I had some last night for dessert and today for breakfast. This is a high protein and low fat recipe and has 100% of the taste. All you need are the ingredients and a food processor. Without further ado, here is it!

Dark Chocolate Vegan Protein Brownies

It's been a minute since I updated this blog and it's a miracle it's happening now! I just made some brownies and wanted to share with you. I'm also on a roll writing my novel so might as well get some blogging done too. These brownies are so ooey gooey good and I think you will like them. I usually link this blog in my Instagram stories but also check the brownie photo caption tomorrow and there will be a list of ingredients in case you want to run to the store. I had chocolate caramel protein powder in my cabinet but no worries if you don't have protein powder, you can use more coconut sugar. We also use cocoa powder for this recipe as well so your brownies will be plenty chocolatey. Add in some chocolate pieces and you have a very rich brownie. No Bake, 7 Minute Granola Bars

Hi!! It's been a little bit but not as long as last time. I whipped up these granola bars last night in under 7 minutes and I let them set in the fridge overnight. They are amazing. This recipe makes 10 bars and requires no small kitchen appliances.

I saw a couple of these cakes floating around Instagram and decided to make a vegan version. The top is all coconut cream and the crust is the most perfect, chewy, chocolatey crust. All you need is a food processor-this cake requires no baking and can be whipped up within minutes. I have not made or had any type of chocolate pudding in FOREVER! Mainly because I stopped buying unsweetened cocoa (you know how you get tired of an ingredient after a while?). But I bought some the other day for my cooking class and I had the other ingredients for the pudding so here it is! Pumpkin Cupcakes with Lemon Buttercream icing

My stress eating during this pandemic is slowing down (yay, I only had one of these cupcakes after I made them) but I still have the urge to bake. These cupcakes are amazing and I used my usual icing for them (get lemons or lemon juice!) Other than that, I am just taking one day at a time during this period of isolation and trying to put good food in my body and move everyday (mostly weight lifting) You should have all the ingredients for these cupcakes in your pantry but I also added a cool unusual ingredient: blackstrap molasses. It goes so well with pumpkin and it has a great amount of iron in it...and I want to use it up. You don't need to add the molasses but I like the subtle taste. I also used powdered sugar because I had no other sweetener but feel free to use coconut or brown sugar. These cupcakes turn out pretty moist and springy and taste great with and without the icing.

I don't ever really celebrate Valentine's Day; February is usually busy with my Dad's bday, my sister's and my bday. But I do love some VDay desserts and I do enjoy sending my niece a Valentine's Day card. But is it a Hallmark holiday? Yes! I also love pink and dark chocolate so I'm going to give Valentine's desserts a 10. They are fun and delish and it's nice to give treats to your loved ones. I love making buttercream icing and I'm currently obsessed with Trader Joe's dark frozen cherries ever since I bought them to have as a snack (frozen cherries are fun to eat). I also love the super dark, amazingly beautiful cherry juice they have when they begin to melt and I thought coloring some icing would work well...it definitely did. You can also color icing with strawberry juice, blueberry juice, even beet juice although I wold reach for a fruit first. You only need a little juice, mix and there you have a glorious pink icing. Rice Crispy Treats (vegan & gluten-free)

You can melt together vegan butter and vegan marshmallows, transfer them to a bowl and slowly add rice cereal and you will get amazing rice crispy treats. You can't mess up this recipe...you can't. I measured everything out for you because...that's what a recipe is but when I doubled the batch, I didn't measure the second round of ingredients so make these as sloppy or as by-the-book (or blog post!) as you wish. I also give you some cool flavors to add so read on! I bought all of these ingredients at Trader Joe's because I knew they have all the ingredients vegan. Trader Joe's sells rice cereal that is organic and has all vegan ingredients-I believe they are also GF but check first before buying if you are strict GF. I am not gluten-free so I don't look for that label unless I'm making it a point to make the recipe gluten-free for someone else. Earth Balance is my favorite, and most readily available, dairy-free butter and Trader Joe's only sells

Mini Chocolate Cheesecakes

I saw a chocolate cheesecake recipe on IG and had to make my own, mostly because I want to get a new recipe up here but also because I was inspired to make another raw dessert. It's been a while since I've made a yummy dessert. I just returned home from Sicily-I was on a yoga retreat-and it was so magical. The food was fresh and organic and wonderful, the people were sweet and amazing and the country was just so simple and beautiful. I enjoyed the hot sun, swam in the pool and the ocean and just relaxed. Now that I spent a week eating local, fresh and organic, I want to keep doing this at home. I'm going to keep reaching for nuts, fruit and fresh veggies as much as I can and phasing out some of these mock meats I've been eating and...the salt, I'm not adding anymore.

No Bake Chocolate Peanut Butter Hemp Cookies

I don't really make a ton of desserts anymore since watching how much carbs I'm consuming but I have relaxed a little bit with it and just make sure I don't consume added sugar. I wanted to make a low carb cookie though for something to snack on as I'm usually running around all day. I try to bring a protein bar or some kind of snack to give me energy and keep my stomach from growling. These turned out delicious and they are no bake!

Two Vanilla Flavored Dessert Bars with 3 Ingredients (Vegan & Gluten-free)

I have some vanilla protein powder left and I wanted to use it in something other than smoothies. I always go right to desserts :) These recipes are fat and protein heavy with no added sugar yet they are delish and satisfying. Sorry for the lack of posts-this blog has been on the back burner as life has happened this past month and a half. I haven't been inspired to make recipes-actually dessert recipes since this blog is pretty focused on that so I haven't logged on. But I just made these amazing bars last night after I made dinner for my friend and I and by the time I was finished it was pretty late. It didn't take long to make these, though, and then you just leave them in the fridge to set.

Easy Homemade Vegan Cinnamon Buns

Ok, ALMOST homemade, I used store bought dough from Trader Joe's. The filling and the icing is homemade, though. These are so delish, I can't even tell you and when you make them at home, you can control what ingredients go into them so they are somewhat healthy. These were inspired by the cinnamon buns sold at Trader Joe's-I buy them all the time when I go home and me, my mom and my niece chow down on them. Next up: homemade pumpkin cinnamon buns!
