Creamy Lentil Soup

Hi!!! I've been gone so long. I gave an update in my last post but for those that didn't read it (is anyone still reading?), I am a full time psychotherapist and started a new job a year ago. My life is so much busier. I work from home and I'm on zoom and calls all day and this blog just kind of fell away. I'm also working on a fiction novel that I hope to publish next year. Or begin looking into publishing or figuring out publishing lol. I spent the summer in the Poconos and it was glorious and now I'm back in New York City during the best time of year! I made this soup after looking at a few recipes out there. I am so into creamy soups and I wanted to do something with all the lentils I have. Buy red lentils for this recipe. Creamy Sweet Potato Carrot Soup

This sweet potato carrot soup came about because I steamed way too many sweet potatoes at once. Did you ever batch cook and then realize you made too much at once? I see you! But now I'm completely fine with having alot of sweet potato (and carrots) because this soup is fantastic. So fantastic, in fact, that I had two bowls today. What I love about sweet potato is the flavor stands up by itself and doesn't require alot of spices. Your kids will love this soup too so read on!

Sweet Potato Kale Soup

So, this came about when I saw something similar on Instagram and I had just purchased a sweet potato at the farmers market. Sweet potato soup is amazing because you don't need a ton of spices; the sweetness speaks for itself and doesn't require alot of dressing up. The longest part of this recipe is steaming the sweet potatoes so you can steam it ahead of time and store it in your fridge. This is so awesome for the whole family and a great soup to make for kids because it's sweet.

Creamy Broccoli & Pumpkin Soup

I'm making something other than oats for breakfast...and it's taking me longer than I normally would at this time of the morning. That's how much I wanted to make this soup! It's shaping up to be lovely, smelling awesome and warm and garlicky-again, something else I would never make or add to food in the morning. I'm trying to change things up so that I'm putting more leafy greens into my body first thing in the morning instead of sugar (I always add coconut palm syrup or maple syrup to my oats). Maple syrup isn't bad for you but I think waking my body up with veggies had to be a little better!

Adzuki Bean Soup with Sweet Vegetables

I'm hitting a road block in the kitchen. I tend to eat the same foods over and over again and I get bored and restless. I decided to go back to the beginning of it, the very first cookbook I received that helped me make the transition to veganism: The Kind Diet by Alicia Silverstone. Not only does she have amazing recipes but she talks about different plant-based ingredients and why they are so packed with nutrients. That combined with this super cool weather, I decided to make soup with some awesome beans.

Miso Soup

I am obsessed with miso soup...OBSESSED! And the kicker is I've had miso paste in my fridge for a while and always overlooked it. Up until now, I've known how good it is for you but it never appealed to me for some reason. Now that I'm looking for an alternative to oats in the morning, I have turned to miso again. Having soup for breakfast is like having tea, especially when it's cold. It wakes you up slowly, warms and nourishes and even energizes you.

Carrot Sweet Potato Soup

I love colorful food. Colorful food makes you feel colorful, happy, light and healthy. Go to a farmers market and you will see a rainbow of goodness. Once you train your tastebuds to LOVE veggies, steamed kale can taste like a milkshake....no really, seriously, I have the biggest sweet tooth and I get the same sugar high from bright green steamed kale as I do from a milkshake. 

Cream of Vegetable Soup

I was standing in a not so long line at Trader Joe's (which is rare!) and I thought of a soup recipe that is based on coconut milk.  Lately at Trader Joe's, I've been buying lots of veggies, pitted olives, dates, light coconut milk and nut butters.  Sometimes recipes just hit me; other times I'm coming up empty with new ideas.

Vegetable Bean Soup

Crisp days and chilly nights just scream for a bowl of soup.  I love an easy veggie soup made with just water or low sodium veggie broth.  This is a great way to try a new veggie and just chop away at your greens to make a huge bowl of antioxidants.  I asked my facebook page fans yesterday what their favorite soup recipes are and I got a huge response!  My mouth was watering reading everyone's favorite soups and I plan on making some of them.

Sweet Potato Kale Soup

It's national kale day, world vegetarian day and the first day of October!!!  So many things to appreciate and celebrate on this rainy Wednesday!  In honor of today, I made sweet potato kale soup, a warming veggie combination of nutrients.  It's a great way to eat your grounding veggies, a way to get in a sweet veggie and a fabulous way to get in your greens.

Minestrone Soup

I know it's summer but I've been thinking about making soup ever since the heatwave broke.  And with the little taste of fall we've had, I'm ready for some cooler weather recipes.  I was going to make this soup in my crockpot but I started cooking later than I wanted to.  But this is a great crockpot recipe so feel free to make this the night before and turn on your crockpot before you leave for work.  Here is everything I threw into my soup!

Bean Soup

It's freezing!!! My heat has not shut off for at least 24 hours. The other day I actually ran outside but I just couldn't do it today. I ran 6.1 miles on the treadmill and did some weights and yoga. So I think I earned this awesome bean soup that I made. You don't need bread or anything else with it, it's super filling on its own.
