Bean Soup


It's freezing!!! My heat has not shut off for at least 24 hours. The other day I actually ran outside but I just couldn't do it today. I ran 6.1 miles on the treadmill and did some weights and yoga. So I think I earned this awesome bean soup that I made. You don't need bread or anything else with it, it's super filling on its own.


I combined kidney beans, black beans, cubes tofu and spices in a pot and heated it for about 15 minutes. I had leftovers because I made a lot.

1 can of black beans
1 can of kidney beans
1 serving of tofu, cubed
Sea salt, pepper, cumin
1 tbsp of nutritional yeast

Combine everything and heat for as long as you want. Sprinkle nutritional yeast on top. Serves 2-3 people or you can save leftovers.
