I didn't peel the sweet potato; I just wasn't going to waste the skin. It's nutritious and it's tedious to peel off and I just don't see the point. When you steam the potato, cut it up into small pieces so it doesn't take long to steam and then make sure you can get a fork through the biggest piece. Once that's taken care of it, you are ready to make the soup which is ready to eat right away.
1 big sweet potato, cut up and steamed
1 cup of steamed kale
1/4 cup of water
2 tbsp of nutritional yeast
2 tsp sea salt and pepper
Pumpkin or hemp seeds to garnish
Cut the potato into small pieces and steam. Once you can get a fork though it easily, you will know it's done. You can peel it or not, whatever you wish. Transfer to your food processor and process on high, adding the water to keep the soup going. Add more water if you want your soup more watery. Add the nooch and sea salt and pepper. While you process the soup, steam the kale. Once the kale is bright green, cut into small pieces and stir into the soup. Transfer the soup to a bowl, garnish with the seeds and serve.
