Mini Chocolate Cheesecakes

I saw a chocolate cheesecake recipe on IG and had to make my own, mostly because I want to get a new recipe up here but also because I was inspired to make another raw dessert. It's been a while since I've made a yummy dessert. I just returned home from Sicily-I was on a yoga retreat-and it was so magical. The food was fresh and organic and wonderful, the people were sweet and amazing and the country was just so simple and beautiful. I enjoyed the hot sun, swam in the pool and the ocean and just relaxed. Now that I spent a week eating local, fresh and organic, I want to keep doing this at home. I'm going to keep reaching for nuts, fruit and fresh veggies as much as I can and phasing out some of these mock meats I've been eating and...the salt, I'm not adding anymore.

It's been a minute since I've blogged. It boggles my mind to look back and realize I used to blog three times a week! I miss those days when I had that vigor and enthusiasm for food and cooking and photographing said food. My goal for the rest of 2018 is to get back to blogging and find my love for developing recipes again! Are we really halfway through the year??

Dark Chocolate Avocado Brownies with Cream Cheese icing

My apartment smells like chocolate. It's Halloween as I write this and I just pulled these brownies out of the oven. As you can see, I'm really diggin fall. I'm absolutely loving how these brownies turned out (the second time) and I'm loving the fact that I'm writing this blog post about one of my favorite plant-based companies. Rich, Decadent Chocolate Cake

  I saw this cake on Bosh on Fb and I was sold. The video is quick and doesn't show everything so you need to make this in order to see that you must double the cake recipe in order to get a thick cake. They also don't say on the video how long to bake it but I just guessed and it worked out. I made this cake for a family dinner and everyone liked it. The icing is super rich and chocolatey and my mom thought it tasted like coffee. I really liked how this turned out.

Veggie Filled Guacamole

I decided to share the guac recipe that I have in my ebook because a. I'm making it for my niece's bday party today and b. it's almost Cinco De Mayo and I love that day so much. It's so easy to make guacamole super healthy and bursting with flavor which is absolutely what everyone wants in a dip. Vegans and non vegans alike love my guac and I've had so many compliments.

Chocolate Peanut Butter Coffee Fudge

So I switched my blog to WordPress and HATED it. WordPress is cool, don't get me wrong, I use it for my yoga studio website but for this blog's purpose, I'm cool with Blogger. I blogged this fudge recipe last week but I improved it and made it coffee flavored so I'm updating this with the coffee version. Using Blogger. I feel like I'm home again 😄

Raw Lettuce Tacos

I'm so sorry for the delay in posts! I sure have missed blogging but this past week and a half was super busy. I went home over this past holiday weekend to see my family for my birthday. I haven't seen my almost 2 year old niece since Christmas and I miss her. It was such a great weekend , I had vegan cupcakes on my birthday and spent alot of quality time with my family. I didn't really have a chance to make new recipes or to really take good photos but now I'm back. Can't wait to share this recipe with you.

Raw Lemon Avocado Mini Cheesecakes

Oh my oh my, I must say I've been killin it with the recipes this week! I absolutely love this recipe, it's easy and sweet and healthy and I LOVE the lemon flavor...absolutely love it. Usually I make cheesecake with a crust but I just eliminated it, mainly because I didn't have dates so these will end up being less calories than my usual raw desserts. I used a cupcake pan for these so grab yours and get going!

Creamy Vegan Pesto Sauce

I try to avoid buying bread because it's a trigger food for me...meaning I eat way too much of it. However, whenever I buy avocados and don't have bread, I'm kinda like...now what? If I had bread, I would make avocado toast in the morning, usually for breakfast. I had two beautiful avocados and no bread so I made this pesto sauce last night. There is nothing more awesome than a beautiful avocado, one that should not go waste, one that has no brown spots and is the perfect texture. One that should be savored as much as possible, usually on bread or in a salad. But when you don't have the ingredients for either of those, make pesto sauce.

Raw Kale Tacos

So, when I got back to New York City after a visit home, I felt so full and bloated. I can't say I was eating a ton while visiting my family but we had alot of potatoes and I had some mock meat and I just needed to detox. My friend was talking all about how she was going raw and I got super inspired! Oh and see what my friend is up to doing THIS ! She is amazing! Anyway, she inspired me and so I have been raw for the past four and a half days. Today I am making food for my Munch and Meditate event and I did have a few tastes of fudge. Anyway, that's it for today, I'm going to be raw until I go home again this week and then I will probably switch to two raw meals and a cooked dinner. I can't say I've lost weight or feel insanely happy but my mood is content and I did run 15 miles on Saturday. So, that theory that plants make you weak is not holding up :)

Chocolate Avocado Pie with Almond Butter Crust

It's late, I'm super tired but I've had no time to blog this week and now seems like the right time. Last night I made this pie at the last minute and it turned out wonderful. I usually need dates or another dried fruit to be successful at making raw crusts but I had no dried fruit whatsoever and this still turned out beautifully. This pie is not technically raw but it's no bake and takes mere minutes to make. Refrigerate overnight and there you have it. It's perfect for breakfast, actually. With some green tea and a little reflection on how beautiful life is.

Chocolate Mousse Pie

Happy Holiday Season!! I originally posted this recipe last Christmas and now it's back! Because it's easy, awesome and so yummy and I will probably be making it again. This recipe is supersized so that you have a enough pie for your whole family. You can use any amount of the ingredients as you wish so feel free to change this recipe to fit your holiday table. I loooove this avocado pudding mix, I make it for everything, you can eat it by itself or top a pie or cupcake with it. It's so yummy and versatile and everyone will love it!

A Holiday Survival Guide (with my "Reset" Smoothie Recipe)

It's that time of year again! The hectic running around, the overindulging, the lack of sleep, the fun, family get togethers; a time when we need to remember to reconnect with ourselves. It's easy to mindlessly eat or forego exercise during this time so having a plan is the best way to go this holiday season. I'm writing this now after years of gaining weight during the holiday season, feeling horrible about myself then working to lose the weight.

Raw Chocolate Icing (vegan, gluten-free, no refined sugar)

I made my raw chocolate cupcakes for my friend who just had a baby and I improved on the icing. It's so hard to believe that this is good for you and that by eating it right from the bowl is actually not bad. There is no risk of a sugar rush from this icing as it is made entirely of fruit and veggies.

Mixed Green and Avocado Spring Rolls

Spring rolls are a great way to get in your greens, they are healthy, delicious and fun to eat. The last two times I made these I dipped them in ume plum vinegar but you can experiment with all kinds of dips: peanut sauce, dijon mustard, soy sauce, so much yumminess in one meal. I bought swiss chard and kale at the farmers market so I filled the spring rolls with these greens plus an avocado. It was great. I know I just posted a spring roll recipe but why not another one? You can never have too many spring roll recipes, especially ones that don't involve frying. 

Brooklyn Half Marathon and My Training Routine

I'm still on a high from my half marathon on Saturday! I finished 13.1 miles in 2 and a half hours and I just couldn't be prouder of myself. I felt energized, confident, inspired, I had a killer playlist with nothing but trance music and I just fed off the crowd of runners and the very supportive spectators. It poured for about a half hour during the run but I just kept going, hoping my iPod wouldn't get damaged. My earbuds went kaput though; the right one lost sound as I began the last portion of the run so I only had music coming into my left ear. It was better than nothing and I got to hear the crowd. I used my music to time myself too so I was hoping the other earbud would not crap out. What a run! This was my first NYC long run; so much time and energy went into my training, not to mention worrying and even though I said this would be my last long run, I'm already thinking about a run in the fall. White Bean and Avocado Burritos

Happy Cinco De Mayo!!! Tacos, burritos, anything with avocado and beans is awesome! I started out making these as a quesadilla but switched to burritos during the cooking process. No oven is required for this; it's a warm day here in NYC and I had no intention of turning on the oven. You only need a large skillet, small pan and spatula.

A simple superfood

I was eating this for dinner one night while I was sitting outside on my balcony enjoying the warm afternoon.  I didn't feel like cooking a huge dinner so I cut up an avocado and ate half of it with brown rice I had left over.  The rice was sprinkled with lime juice and Mrs. Dash fiesta lime seasoning blend.  It's that simple.  One thing that is great about rice is that you can make a ton of it and save it for leftovers and then dress it up depending on what kind of flavor you want.  Add fiesta lime seasoning or taco sauce if you want Mexican, add soy sauce and ginger if you want an Asian flavor.  Or just eat it with a little sea salt and olive oil.  Rice is a powerful whole grain that gives you energy and fiber.  Avocado is a super food; I don't go through my day without eating an avocado or at least half of one.  Enjoy!
