White Bean and Avocado Burritos


Happy Cinco De Mayo!!!

Tacos, burritos, anything with avocado and beans is awesome! I started out making these as a quesadilla but switched to burritos during the cooking process. No oven is required for this; it's a warm day here in NYC and I had no intention of turning on the oven. You only need a large skillet, small pan and spatula.


So...YUM!! These tasted amazing and I didn't have any toppings like sour cream or guacamole. The spices taste amazing in this dish and I know you will love these burritos as much as I do!

White Bean and Avo Burritos:
1-2 whole wheat pitas
1 carton of white beans
1/2 avocado
1 shallot, chopped
2 cloves of fresh garlic, chopped
1/4 cup of vegan mozzarella
1/2 tsp of red pepper
1 tsp of sea salt
1 tsp of ground cumin
1/2 tsp of paprika
1 tsp of oregano

In the small pan, turn the heat on low and add the shallots and garlic until they are roasting and aromatic. Add the beans and spices and stir well. Cut an avocado in half and slice up one half into small pieces. Add the avocado pieces to the pan and stir. Taste and add more spices if needed. In the large skillet, spray it with coconut oil and toast the whole wheat pita(s). They will become hard and turn slightly brown and crispy. Scoop the bean and avocado mix into each of the pitas. Add some vegan mozzarella and fold the burrito over; the cheese will begin to melt.

Serve and enjoy.
