Why do I love dressing up coffee? I mean it's perfectly fine brewed and served all my itself but for some reason I want to mix in some creamy milk and sweeten it up and add a frozen, smoothie aspect to it. This creation was inspired by an instagram post that I found by The Floured Kitchen. It's creamy and rich and sweet and you can make it as healthy as you wish. Instead of making it with homemade ice cream, I bought Almond Dream cappuccino swirl ice cream. But I also have a chocolate peanut butter homemade gelato recipe here that would go great with this recipe.
I was never a coffee person growing up because my mom drank tea. I never even got into it in college because I just wasn't used to drinking it. I started drinking a ton of Starbucks when I worked as a social worker after college. My coworkers and I went as a group to the Starbucks near our office and ordered giant frappuccios. When I went vegan, I was pleased to know that they had plant-based milk. I often wonder just how much of my hard earned money I gave to Starbucks. Anyway, it was super fun getting out with my coworkers and sipping on yummy, high calorie coffee. As I look back on this now, this is where my love for coffee began and who doesn't want to make homemade frappuccinos??
Now, I buy Trader Joe's cold brew coffee and dress that up. It's very strong so you need to dilute it but it's PERFECT for iced coffee and coffee smoothies. My favorite ingredients to add to a coffee smoothie is peanut butter and chocolate.
1/2 cup of ice cream
1 cup of plant-based milk, I used coconut milk
8 oz of coffee, cold brew or freshly brewed
5-6 ice cubes
Add half of the ice cream to a cup or mason jar. Add the milk, ice cubes and coffee. Then add the rest of the ice cream. I waited a little bit before I drank it so the ice cream could melt. I drank about half and saved the rest for tomorrow. Did I mention Trader Joe's cold brew is hella strong??? Happy coffee drinking!!!
