Chocolate Peanut Butter Coffee Fudge


So I switched my blog to WordPress and HATED it. WordPress is cool, don't get me wrong, I use it for my yoga studio website but for this blog's purpose, I'm cool with Blogger. I blogged this fudge recipe last week but I improved it and made it coffee flavored so I'm updating this with the coffee version. Using Blogger. I feel like I'm home again 😄

OK yeah this recipe. OMG you guys this fudge is amazing. Along with using coffee, I also eliminated the coconut oil to make it less calories and lower in fat. I couldn't stop eating it. My mom came over this weekend to visit me and at one point she asked if there was fudge left and I was like no because I ate it all.



1 1/2 avocado

1/2 cup of unsweetened cocoa powder
1/4 cup of peanut butter
1/4 cup of maple syrup
1/2 cup of unsweetened soy milk
2 tsp of vanilla extract
6 oz of strong coffee


Make the coffee and let it cool down a little bit. Put all of the ingredients in your food processor except the milk. Turn your food processor on high and add the milk; the mixture will be a thick batter. Pour the batter into a glass bread dish and freeze. Cut into small pieces when it's a little bit more frozen. Keep in the freezer but it DOES freeze solid so you will need to let it sit on the counter before you eat it. Freezing it does help you to not eat it all at once 😊


Feel free to use coconut oil, though, instead of milk. Use about 4 tbsp melted. Use more cocoa powder if you want the fudge to be darker chocolate or only 1/4 if you want it to be milk chocolate. You can really taste the coffee. This fudge is AMAZING!
