4 Ingredient Caramel Oatmeal Cookies

I started my 30 day trial of Prime Pantry and I ordered dates so of course I had to make caramel. These aren't the decadent medjool dates from Trader Joe's but the smaller California dates that are perfect for raw desserts. I'm trying a new thing this year-buying everything I need to eat from the farmers market and buying staples like rice and beans on Amazon. That way most of my money is spent on greens, potatoes, tomatoes and fruit from local, organic farms. Plus it's just too hot sometimes to lug bags from the grocery store in the sweltering heat!

Three Sweet Treats that I'm Loving Lately

Maybe I should make this a dessert blog. I love pulling out my food processor or hand mixing desserts in my favorite glass blue bowl and then having a sweet treat for any time of day. My desserts are usually healthy enough to eat for breakfast or for before a workout. I try to add as little sweetener as possible or I use fruit like dates or bananas to sweeten a dessert. These are my latest creations:

Chocolate Peanut Butter Brownie Slices

Ok, so I no sooner posted about not doing much in the kitchen when I got busy making these brownie bars. The first bite you take tastes like raisins and peanut butter but as you get chewing, you can taste the chocolate and chewiness. I love any dessert you can just whip up in your food processor and then freeze.

Chocolate Caramel Slices

I made these last week and put the recipe in my social media caption and everyone went nuts. My Instagram and Fb blog page lit up and I got a ton of comments and likes. They are super delish and a great dessert to make to impress your friends. I love making caramel with dates and nut butter-this is the best part of these bars!

Vanilla Banana Muffins

I wasn't buying oats for a while because I needed a break from them (I know, crazy right?). Sometimes when I have a copious amount of oats, I bake and bake and make loads of oatmeal and then I'm all sugared out. I figured I would take a break from buying them for a while so I can chill with the sugar. I bought some oats the other day again and I decided to make these muffins last night. They are so delish and ended up perfect and I had one this morning for breakfast.

Cherry Cheesecake

I made this cherry cheesecake for my SOLD OUT Munch and Meditate Supperclub last month. It was a hit along with my chocolate cake . It's easy and totally delicious. I made this for my mom too so she could try it and tell me how it was (she's not vegan) and she really loved it. This went pretty quickly the night of my supperclub dinner so needless to say, I had no leftovers.

Dark Chocolate Pumpkin Brownies with Chocolate Peanut Butter Icing and my Supper Club

These are super fudgy...so if you like super fudgy, soft brownies, make these. I used pureed organic pumpkin and baked them for at least 30 minutes but they are still fudgy. That's fine with me, by the way! These brownies are a wonderful sweet treat that is also flour-free and can be made with different nut or seed butters. Oh and along with this recipe, I also have my Supper Club announcement!

Chocolate Oat Krispy Bars

Sometimes the best recipes come about when you mess up another one. These were no exception. I'm writing this a week and a half after I made these so I forget what original recipe I was trying to make but these happened and they are pretty awesome. I made these with and without chocolate but I think the chocolate wins so I'm writing out the chocolate recipe. I was aways so-so with rice krispy treats when I wasn't vegan; I didn't seek them out but they were good when I ate them. So here is a vegan version without marshmallows or butter.

My apartment smells like chocolate. It's Halloween as I write this and I just pulled these brownies out of the oven. As you can see, I'm really diggin fall. Adzuki Bean Brownies with Chocolate Icing

Yo, these are so good, people! Fudgey and chocolately. They are also super healthy. I love using beans in place of flour because you're getting lots of fiber and protein along with a sweet treat. This recipe is made completely with whole, plant-based ingredients, nothing processed or artificial. I recently made adzuki bean soup a few posts down so check that out too.

Two Ingredient Caramels

The sweetener for this recipe is critical as is the temperature with which it must be when making these caramels. It's the simplest recipe ever and these caramels are pretty insane. I lost another 2 pounds so I'm treating myself. I'm also running 10 miles on Sunday in record heat so...comfort food.

Chocolate Walnut Fudge Bars

Yeah...so can you tell I'm back to chocolate and peanut butter recipes now? That was a quick break! Oh yeah and you have to make the adzuki bean recipe that is before this one. It's a way different recipe than what I've been posting but it's a hearty, healthy dinner and a great meal to make in bulk and freeze. But now for dessert....the batter for these is already fudge in your food processor so after I freeze them I expect them to be rich and chewy. I just popped 4 bars in the freezer and sat down to quickly get the recipe down here.

Twix bars

These look like twix bars but I haven't perfected the crunch so they are more like chewy twix bars. They aren't too sweet and they are made with amazing healthy like coconut and peanut butter. Totally amazing, perfect for dessert or breakfast, I know you will love these as much as I do!

Chocolate Caramel Cookie Cups

Rich, Decadent Chocolate Cake

  I saw this cake on Bosh on Fb and I was sold. The video is quick and doesn't show everything so you need to make this in order to see that you must double the cake recipe in order to get a thick cake. They also don't say on the video how long to bake it but I just guessed and it worked out. I made this cake for a family dinner and everyone liked it. The icing is super rich and chocolatey and my mom thought it tasted like coffee. I really liked how this turned out.

Chocolate Caramels

These turned out....almost perfect. I made them lower in calories and fat so when they froze, they froze almost too much. I will include modifications so that you can make these another way. But as far as a tasty, healthy, chocolatey treat goes, keep reading, you absolutely won't be disappointed. These caramels require very little ingredients and minimal prep time.

Coconut Peanut Butter Chocolate Bars

I have not made a raw dessert in ages...actually a no bake dessert because technically the ingredients for this recipe are not all raw. Since I ditched the dates and started watching how many calories I eat, raw desserts aren't worth it and it's difficult to assess how many calories are in each serving. But last night I didn't care, I just whipped these up and honestly, didn't fully keep track of the measurements I used. So, as you follow this recipe, feel free to add or delete a little here and there based on your own kitchen expertise.
