Creamy Lentil Soup

Hi!!! I've been gone so long. I gave an update in my last post but for those that didn't read it (is anyone still reading?), I am a full time psychotherapist and started a new job a year ago. My life is so much busier. I work from home and I'm on zoom and calls all day and this blog just kind of fell away. I'm also working on a fiction novel that I hope to publish next year. Or begin looking into publishing or figuring out publishing lol. I spent the summer in the Poconos and it was glorious and now I'm back in New York City during the best time of year! I made this soup after looking at a few recipes out there. I am so into creamy soups and I wanted to do something with all the lentils I have. Buy red lentils for this recipe. Easy Homemade Vegan Cinnamon Buns

Ok, ALMOST homemade, I used store bought dough from Trader Joe's. The filling and the icing is homemade, though. These are so delish, I can't even tell you and when you make them at home, you can control what ingredients go into them so they are somewhat healthy. These were inspired by the cinnamon buns sold at Trader Joe's-I buy them all the time when I go home and me, my mom and my niece chow down on them. Next up: homemade pumpkin cinnamon buns!

Adzuki Bean Soup with Sweet Vegetables

I'm hitting a road block in the kitchen. I tend to eat the same foods over and over again and I get bored and restless. I decided to go back to the beginning of it, the very first cookbook I received that helped me make the transition to veganism: The Kind Diet by Alicia Silverstone. Not only does she have amazing recipes but she talks about different plant-based ingredients and why they are so packed with nutrients. That combined with this super cool weather, I decided to make soup with some awesome beans.

Date Sweetened Creamy Hot Chocolate

When I think of a comfort drink, I think of a homemade coffee smoothie or a hot chocolate. Now that it's cold pretty consistently, I've been craving hot drinks lately. I'm still doing a sugar detox because I really went wild the past few months so this hot chocolate is only sweetened with dates, nothing else. Honestly, I haven't thought much about sugar and I feel wonderful. Dates can sweeten pretty much anything and they are more than enough to make your recipes taste great without throwing yourself into a food coma.

Banana Bread

I wanted to make a recipe that would fill my apartment with a lovely, cinnamon, pumpkin, sweet smell that is tis the season. I'm obsessed with pumpkin pie spice and cinnamon and nutmeg and all things fall. This bread is gooey and warm and filling and pretty healthy. I'm such a huge fan of oat flour, which is simply quick oats in the food processor. I tried not to eat alot of this but I dug in after it came out of the oven.

Raw Mini Apple Cheesecakes

For my next apple dessert, I was further into my comfort zone since raw desserts are my jam. I made these out of the ingredients from my last post, the baked apple cheesecakes . This is an awesome dessert to whip up when you need something sweet or want to impress your friends. Made with nuts, fruits and oats, this dessert is whole food based and full of nutrients and goodness.

I saw these on Delish.com , actually I saw the video that one of my Facebook friends posted and decided to veganize and make these healthier. They looked so interesting though I will say I was not super excited to bake apples since the skin was still on them and I wasn't sure I would enjoy these. But I took a few bites out of one and they are soft and warm and very delicious. I ditched the cream cheese and butter and made these with whole foods. Also, even better, I got another dessert out of the ingredients I made these apples with. So, I am pretty stoked right now to share not one but two apple desserts.
