Creamy Peanut Butter Mousse

Vegan peanut butter mousse. It's so delish and can be enjoyed any time of the day. I had some last night for dessert and today for breakfast. This is a high protein and low fat recipe and has 100% of the taste. All you need are the ingredients and a food processor. Without further ado, here is it!

Vegetable Wontons

The best part of this recipe is what is inside, not what is outside! The inside is where you get to be creative because the outside is store-bought wonton wrappers. So think about those veggie and vegan protein combos! These make a wonderful appetizer or snack. You can buy wonton wrappers in any health food store. Many have section that sell different cuisines around the world; these are refrigerated packaged wonton wrappers that are small squares; they are sold in big quantities and you need to use them within a week to 10 days so when you buy them, take time to get familiar with how to make them. The back of the package instructs you how to fold the wonton once you place the filling on the wrapper but there are no rules, make any shape you wish, fold in any way you can. Plant-Based Protein

This fall, I began counting my macros and focusing on increasing my protein so that I could start to really build muscle. I hadn't sat down and concentrated on planning out protein filled meals so it took some getting used to. And I also realized that if I didn't think about what I was eating, I would reach for sugary, carb heavy foods. Plant-based protein...that's what this blog post is all about. I'm going to give three meals as an example and list some of my must-have protein-filled foods.

How to Make Fluffy Basmati Rice

I'm always and forever trying to make rice like they make at Indian or Persian restaurants. It's so delicious, fluffy and flavorful and I love the texture of basmati rice. So, I was talking to a friend who makes rice alot and he helped me with the recipe. The idea is to sautee the rice first and add ingredients that will give it flavor such as garlic, onion, spices etc. I serve the rice with beans or tofu, either sauteed or in a curry sauce. Rice is just so amazing, it's simple but nutritious and is a great alternative to bread or other grains.

Four Ingredient Pancakes

I have tried pancakes in 100 different ways, it seems, so I'm just going to add to the list today. I usually make pancakes with a mushed banana but I had tofu last week and I replaced the banana with tofu....and it was so delish. And high in protein. Tofu is cool. You can make tofu scramble, bake with it or even make tofu cheese.

Italian Chickpea Salad

All day I was in the kitchen making food for my marathon fundraiser; a meditation and restorative yoga class followed by a vegan dinner. I didn't even know what the temperature outside was until 5pm when I left to head to my yoga studio for the class. I dropped stuff, made a few messes, but ultimately, it was a meditative experience in itself cooking these dishes. All I could think of was the beautiful people who were going to eat the food and meet each other and bliss out during my class. It was such a great class and I raised a good amount of money for my fundraiser .

Things I love lately + Giveaway Reminder

I've been hitting the keys lately writing and blogging (I'm working on a fiction novel) and enjoying life in the big city. First off as you can see, I renamed my blog and I'm LOVING it! Fabulous Fit Food just didn't sit well with me, I found myself disliking it alot and the last couple weeks I have thought about what I want to rename this blog. I can't believe how many ideas I had and how many of my ideas were already taken by bloggers, Youtubers and health and wellness coaches. It got kind of frustrating so finally I just stopped thinking about it so much. I went home for my niece's 1st bday and just let go of the blog a little bit.

Miso Soup

I am obsessed with miso soup...OBSESSED! And the kicker is I've had miso paste in my fridge for a while and always overlooked it. Up until now, I've known how good it is for you but it never appealed to me for some reason. Now that I'm looking for an alternative to oats in the morning, I have turned to miso again. Having soup for breakfast is like having tea, especially when it's cold. It wakes you up slowly, warms and nourishes and even energizes you.

Homemade White Pizza with Spinach and Tomatoes

White pizza with broccoli...I had this all the time before I became vegan. It had ricotta and mozzarella cheese and it was so delish. Then I tried Two Boots white pizza (it's called the vegan Larry Tate) and I was astonished at how it took me back to my regular pizza eating days, the days when I ate cheese without thinking about where it came from. I don't deny even today that cheese from cow's milk is good but knowing what I know about its origin doesn't allow me to enjoy it anymore. There is no reason not to enjoy a vegan white pizza when it tastes just as good and is just as easy to make as a non vegan version. So read on for a cruelty free, completely delicious pizza recipe.

Spring Rolls

My mind is totally concentrating on training for this Brooklyn half marathon and I haven't been cooking as much. I've also mostly eaten raw foods lately and I've done alot of eating out because I need to grocery shop (I never eat out as much as when I moved here, it's expensive). Yesterday I went to Candle Cafe for lunch, an upper east side vegan place that was yummy. I also visited Juice Generation this week for a smoothie and I also hit Red Bamboo last week, an all vegan asian restaurant in the West Village. Tofu Quesadillas

The little one that I take of a few hours a week had leftover quesadillas Monday night for dinner which totally inspired this dish. I don't usually buy tofu because I keep my soy intake to a minimum but tofu is so incredibly versatile and when I do have it, I make a ton of food with it. I didn't have any avocados so I just worked with what I had, fresh organic cherry tomatoes and fresh garlic for a quesadilla topping. Yum and more yum.

Tofu Scramble

I'm throwing it back to my tofu scramble recipe because I'm making it again today. Sometimes I need to ignore all the bad soy talk and make some tofu. It's so versatile, such a great food that allows you to experiment with different spices and flavors. I can think of so many ways I've used tofu in recipes, it is definitely an ingredient worth getting to know. Check out the labels to your right and click on tofu to see the many recipes I have posted here. Buy organic tofu with as few preservatives as possible; you can find it with just one preservative. Soy is one of the top 5 GMO crops so always buy it organic and, if you are concerned about soy, buy it every once in a while. You don't need to include soy in your diet on a daily basis; it can be a treat.

My Upcoming Selfcare Workshop and a Recipe

Hello beautiful people! Hope you had a fabulous weekend and are relaxed heading into a crisp fall Monday! I had a fabulous weekend with my Philly friends. We went to the Met and the Museum of Natural History, we had an awesome Mediterranean dinner on Saturday night of falafels, hummus, Greek salad, stuffed grape leaves and more. It's always nice having my friends and family visit. I'm conducting my first health and wellness workshop with my fellow yogi, Michele. Michele and I met during yoga teacher training over the summer and she was one of the first yogis to welcome me to New York City. Michele is a licensed marriage and family therapist and is also a certified yinyasa yoga teacher. We are presenting a self care workshop later this month to help you stay calm and in tune with your body this holiday season and beyond.

Miso Stir Fry with Veggies and Tofu

I made a recipe that I was comfortable using mushrooms in!  I bought organic mushrooms at Trader Joe's last week even though I don't like them at all.  I've always avoided mushrooms when I could, I ask restaurants to hold them, I never buy them and if I do eat them inadvertently, I get grossed out.  I knew I just needed the opportunity to buy them and cook them but I just never wanted to do this.  Then I saw super cheap mushrooms at TJ's and I decided to buy them.  Last night, I made a stir fry and knew, other than pizza, that this would be the best recipe to use them.  I've heard so many wonderful things about mushrooms in my IIN studies, anti-cancer, anti-inflammation, very potent little ingredients.

Creamy tofu with rice and barley

I came home from a run last night and I smelled the yummiest curry. I live in a condo so I can tell when my neighbors are feasting. It inspired me to make a creamy dish made of tofu and whole grains with some milk and the vegan cream cheese I have in my fridge. I scoured the internet for a good recipe, found one and modified it. I don't have curry powder but I had tumeric, cumin, ginger, garlic and more. This was a great dish, I taste tested more than I should have. I'm bringing it for lunch today. This dish is yellow because of the tumeric and it's super filling and nutritious. You can also substitute the tofu with a bean.

Tofu scramble

This recipe makes your dish look like scrambled eggs. If you or a loved one is transitioning to an egg-free diet, this is the dish to make. As a child, I ate fried egg sandwiches, scrambled eggs, eventually egg white omlets and I really enjoyed my eggs with toast. So, now I make the same thing except with tofu.

Tofu Scramble

Omg last night I was craving an egg sandwich, the kind my mom made me when I was little! The yolk was hard, it was sprinkled with salt and pepper and topped with cheese on white bread. I was thinking about it but not obsessing over it. So I wrote down the craving and gave it a 5 out of 1-10. I don't get it because eggs gross me out and before I became vegan, I stopped eating them. Maybe I was just craving comfort food from my childhood. My Integrative Nutrition book talks about craving food from your childhood or food that your ancestors ate. I'm guessing this is why I was thinking about an egg.

Tofu Scramble

Tofu is so versatile...you can add it to any recipe at any meal, you can season it and cook it many different ways.  Tofu is a great substitute for egg whites if you're used to scrambled eggs in the morning or you want something light to go with toast.  You can make tofu scramble healthy by adding veggies and cooking it with coconut oil.

Veggie tofu burrito

I went to Kutztown, PA with my friend for some shopping and we stopped in Betty's cafe for lunch. I got a veggie tofu burrito that is very easy to make so I made it this morning for breakfast. Here is what I did:

Here are some dinner recipes now.  I've been obsessed with cabbage for a few months now ever since my mom bought Pagano's beans and cabbage salad over for dinner one night.  Cabbage is awesome.  It has a lot of nutrients and is gentle on digestion.  I make cannellini beans and cabbage a lot.  I also love using my crockpot to make cabbage soup, although now that the weather is getting warmer, I may put that on hold.
