Tofu Scramble


Tofu is so versatile...you can add it to any recipe at any meal, you can season it and cook it many different ways.  Tofu is a great substitute for egg whites if you're used to scrambled eggs in the morning or you want something light to go with toast.  You can make tofu scramble healthy by adding veggies and cooking it with coconut oil.

Ingredients:
1-2 servings of tofu
Onion
Sweet peppers
Organic mixed greens
Nutritional yeast
2 tsp of cumin
Sea salt
Pepper
Coconut Oil
100% sprouted whole grain bread (optional)
Natural fruit preserves

Melt 1 tbsp. of coconut oil in a medium pan.  Crumble tofu by hand over the pan.  Turn the heat on low while you chop all of your veggies.  Chop a sweet onion, sweet peppers and add mixed greens to the scramble.  Cover the pan with a lid and let the tofu simmer for about 2-3 minutes. You can add some seasoning like sea salt and pepper and cumin.

Transfer to a plate and sprinkle on some nutritional yeast to give the tofu scramble a nutty flavor.  I ate my scramble with some whole grain toast and fruit preserves.  This dish is a wonderful way to get your veggies in first thing in the morning.  It's also perfect for a light lunch or dinner.

Tips:
Tofu needs to be dressed up or it can be bland, much like egg whites.  Add more vegetables such tomatoes or avocado to the dish.  You can roast the tomatoes in the same pan as the tofu and then add some spices to the tomato.  The avocado can be added when you plate the tofu scramble.  Add your favorite spices when cooking so the tofu takes on different flavors.

Tofu has a high water content so you can drain it a little bit before cooking.  Place the tofu on a plate and then put another heavy plate on top of the tofu.  The water will be drain out slowly so press the tofu for about 15 minutes.  Crumble and then cook as described above.
