Happy Friday! I was going to post another of my ebook recipes but then I whipped these up the other day. Apple cinnamon cookies....they originally started out as an apple cinnamon loaf but ended up halfway into making them to be cookies. They are so yum!! Vegan and gluten-free.
Ingredients:
2 cups of oats flour
2 tsp of baking powder
1/2 cup of coconut sugar
1/2 cup of applesauce (or you can use blended apples)
1/4 cup of filtered water
Tons of cinnamon (I didn't even measure it!)
You can use more applesauce; just use less water. Also, oat flour is simply 2 cups of rolled oats processed in your food processor on high until it turns into flour.
Combine your oat flour, baking powder, sugar and cinnamon in a large bowl and mix well. Add the applesauce and water and keep mixing by hand. Add more sugar if the batter is not sweet enough. Spray a cookie sheet with a little coconut oil and put a small dollop of cookie dough on the cookie sheet until you've used all the dough. Make smaller cookies so you have more. Bake at 350 degrees for 15-20 minutes; don't let the cookies brown. You will have chewy cookies after they are baked. Store in an air tight container for later consumption (if you can resist not eating all of them in one sitting!)
The rolled oats I buy from Trader Joe's are gluten-free so if you only do gluten-free baking, make sure your oats are GF. You can also use raw sugar or powdered date sugar for this recipes. I hope you enjoy these as much as I did!
