Oatmeal Banana Cookies (No Flour or Oil)


Hello friends! I made these cookies by modifying a recipe I saw on Facebook. I deleted the chocolate chips and added oatmeal. I also added three bananas that were about to be too ripe. These cookies can be made in under 15 minutes.

Here is what I did:

2 tbsp of almond butter (you can use 1/2 cup but I ran out)
1 can of chickpeas
3 very ripe bananas
1 1/2 tsp of baking powder
1/4 cup of agave nectar or maple syrup
2 cups of oats

Put all ingredients except the oats into a food processor and blend for about a minute. Transfer to a medium size bowl and stir in the 2 cups of oats. The batter will thicken and become easier to form into cookies. Spray coconut or olive oil on a cookie sheet and spoon out cookie dough onto the cookie sheet (should make about 15-20 cookies depending on what size you make the cookies)
Bake at 350 degrees for 12 minutes. Let the cookies cool on a cookie rack and enjoy. They are very yummy and very healthy!
