Creamy Chocolate Coffee Elixir with Healing Spices

Today I went out early to Whole Foods to get coconut milk so I could make this delicious coffee drink. It was a cold, brisk awesome walk and WF was empty. Now I'm home and in the midst of drinking this beverage and I feel hugged, warm and comforted. I plan on taking these good vibes and doing some fiction writing after I write this blog post. This drink is full of healing, warming spices and a low low glycemic sweetener (yep, brown rice syrup). I know you will love this drink!

Creamy Coconut Hot Chocolate

This recipe has sat on deck for a week now because I needed to get the ingredients so I could take proper photos. Well, my fridge is full of dates so life is good. Creamy hot chocolate satisfies my craving for a latte. I think it's the hot, sweet beverage that is just so similar to a latte that does it. And though I don't get a coffee high from hot chocolate, it just warms me like a nice soy latte does. I rarely buy coffee out anymore because lately I've enjoyed one of these in the morning. In fact, I'm already thinking about tomorrow's cup of hot choco. 

Hot Chocolate

This hot chocolate is low calorie, low glycemic index.  Even if it's not cold out, you can drink this after dinner if you're craving something sweet but don't want to eat dessert. 1 cup of unsweetened vanilla almond milk 1 tbsp. of unsweetened cocoa maple sugar to taste (I use 4 tsp) Heat the almond milk and cocoa in a small pan on the stove.  Heat it up to whatever temperature you like to drink hot beverages.  Pour into a mug and wait for it to cool a little before adding the sugar.  Add a little sugar and then taste it, you may not need to add as much as you think.  Once you get the drink to your desired sweetness, enjoy! Tip: start to add a little less sugar each time you make this.  You may find that you eventually need little to no sugar.
