These cookies are no bake and super easy and very very delish. I love making no bake desserts. You just throw a bunch of ingredients together and you have a healthy sweet. Also, I made them without dates so it doesn't require the use of a food processor. Just a big bowl, a wooden spoon and your hands!
Have these for breakfast, a snack or dessert because they are sweet but also nutritious. They are high in fiber, protein and healthy fats plus lots of vitamins and minerals. Two cookies and a tall glass of soy milk....a perfect treat! As with my previous recipe, I used brown rice syrup as the liquid sweetener. Brown rice syrup isn't low calorie but it supposedly has a very low glycemic index so you can use it when you're trying to avoid or minimize your sugar intake.
1.5 cups of quick cook oats
1/2 cup of natural peanut butter
2 tsp of vanilla extract
2 tbsp of cinnamon
1/4 cup of brown rice syrup
1/4 cup of chopped walnut
2-3 tbsp of soy milk
Set the milk aside. Mix all of the ingredients in a large bowl, first with a large spoon and then with your hands. The brown rice syrup is very thick and sticky so using your hands is easier. To make the mixture more like cookie dough, add the milk and mix some more with your hands. Wet your hands so the cookie dough doesn't stick to them as much. Mix so that all the ingredients are evenly distributed. Press onto a large plate and flatten into cookies, using a fork to make the design on top. I made about 10 cookies. Store in the fridge.
