Baked Peanut Butter Apple Oatmeal

You make this dish like you would stove-top oatmeal so if you don't mind turning on your oven, this will be the perfect breakfast (or dessert, I'll show you how to dress it up!) I have a good amount of green apples from my Misfits Market delivery (use code COOKWME-YJ5BBF for 30% off your first order) so what better way to use them than for making a baked dish. Apple pie was too complicated for today so I pulled out the oats. Adding maple syrup is totally optional but I love the sweet touch that it gives the dish. I love how the apple bakes covered in the maple syrup too. You can also add water instead of the milk and then add a little coconut cream to give it a thicker, creamier texture. Also add cut up medjool dates or another fruit such as blueberries. 

Three Sweet Treats that I'm Loving Lately

Maybe I should make this a dessert blog. I love pulling out my food processor or hand mixing desserts in my favorite glass blue bowl and then having a sweet treat for any time of day. My desserts are usually healthy enough to eat for breakfast or for before a workout. I try to add as little sweetener as possible or I use fruit like dates or bananas to sweeten a dessert. These are my latest creations:

Apples with Healthy Caramel Dip

I make these delicious dessert bars with a caramel layer and I thought what if I use this recipe as a dip for apples. I'm totally 3 months late with this recipe since caramel apple season was pretty much October but it's never too late to eat this caramel sauce. OMG, it's so yum and absolutely free of preservatives, dairy and chemical crap.

Raw Mini Apple Cheesecakes

For my next apple dessert, I was further into my comfort zone since raw desserts are my jam. I made these out of the ingredients from my last post, the baked apple cheesecakes . This is an awesome dessert to whip up when you need something sweet or want to impress your friends. Made with nuts, fruits and oats, this dessert is whole food based and full of nutrients and goodness.

Baked Apple Cheesecakes

I saw these on Delish.com , actually I saw the video that one of my Facebook friends posted and decided to veganize and make these healthier. They looked so interesting though I will say I was not super excited to bake apples since the skin was still on them and I wasn't sure I would enjoy these. But I took a few bites out of one and they are soft and warm and very delicious. I ditched the cream cheese and butter and made these with whole foods. Also, even better, I got another dessert out of the ingredients I made these apples with. So, I am pretty stoked right now to share not one but two apple desserts.
