Homemade Pickles


This recipe is awesome if you have alot of cucumbers and not one jar of pickles in sight. I've been snacking on these pickles for the last two days and they are just perfect-tangy and delicious. All you need it a mason jar and just a few ingredients and you have a jarful of pickles. No more buying (or forgetting) pickles at the store.

1 medium cucumber, sliced

1/2 cup of apple cider vinegar

1/2 cup of filtered water

2 cloves of fresh garlic

1 tbsp of lemon juice

1.5 tsp of sea salt

Slice the cucumber into two halves then slice each half into flat slices (much like the shape of sandwich pickles at the store). In the mason jar, add the vinegar, water, garlic, lemon juice and sea salt. Then add the slices of cucumber-you should be able to add all the slices to a medium size jar. Shake the jar gently 2-3 times to mix up all the ingredients then store in the fridge. 

These pickles are wonderful straight out of the jar! This morning I put a few slices on a bagel with cream cheese. I also love pickles on my tofu breakfast sandwich or a veggie burger.
