Chocolate Peanut Butter Filled Oat Bars


I bought these new Clif bars that are almond butter filled. They are, of course, yummy and then I just decided to make my own. I usually eat Clif bars before a run so after I made my own, that is exactly what I had before I ran today. I didn't end up running as long as I wanted because the Citibikes were calling me but I did get a great workout in this morning.


I wanted to run around 10 miles today but I was just two tired. I tried not to get down about this but I really was tired, it was humid and the Citi bikes everywhere were so so tempting. I biked a few miles then ran again then biked again. Exercise is exercise and I should know from training for the marathon that sometimes running a long training run isn't in the cards. I'm running the 5th Ave mile fun run on September 10th and then the Bronx 10 mile on September 24th. And lastly, a 5K on November 4th which will be 9 runs and I will be qualified for the 2018 NYC half and full marathons. I'm super proud of all the running I did this year so getting down over one training run is silly. Don't get down over 1 training run!


These bars are pretty awesome. They are a peanut butter and chocolate addicts dream and they are very easy to make. I always start with the same base: oats, peanut butter and a sweetener so it's more of that but I added more peanut butter for a filling. Check!

Cookie
1 cup of oats
3/4 cups of peanut butter
1/4 cup of maple syrup or any liquid sweetener
1 scoop of chocolate protein powder
3 tbsp of non dairy milk

Chocolate
1/4 cup of coconut oil, melted
2 tbsp of coco powder
3 tbsp of maple syrup

Mix everything until you get a cookie consistency. Press some of the mixture into bar molds, spread some peanut butter on top then cover with some more of the cookie mixture. Mix all the chocolate ingredients in a small pot on the stove and when it is cool, drizzle on top of each bar. This recipe makes about 5 bars. I hope you love them!
