Spaghetti with Almond Butter Sauce


Dinner is my most favorite meal of the day. I have the biggest appetite in the evening (I wish I didn't) and I love planning and preparing dinner. My dinners this week were filling, clean, nutritious plates of food that were mostly gluten-free. By the way, I don't set out to always be gluten-free but I usually end up doing that since whole grains are super clean energy sources and by nature are gluten-free.
I usually buy quinoa or rice or both quinoa and rice pasta from Trader Joe's. They have spaghetti and rotini shaped pasta as well as penne.  They cook up slightly different than regular pasta (they take longer) but I love trader Joe's brand.


I buy unsalted almond butter and I used it for this recipe. This sauce is oil and salt free (except for the natural almond oil). Top your pasta or rice with this sauce. Combine with veggies and/or tofu.
Almond butter sauce:

2 tbsp of unsalted smooth almond butter
2 cloves of garlic
2 small pieces of fresh ginger
2 tsp of lemon juice
Filtered water

Combine all ingredients in your food processor and process on high. Add the water as needed to make the sauce less thick and to keep the almond butter moving. Pour over cooked pasta.
I ate this with broccoli, cherry tomatoes, sweet potato and olives. So yum and filling.
