Bowl of Oats Cookies


Today I was eating oatmeal and wondering how awesome it would be if I put my oatmeal ingredients into a cookies. So I brought the ingredients over to my mom's and after christmas eve dinner, I whipped these cookies up in under 10 minutes. They are vegan and gluten-free.  


Ingredients:
2 cups of oat flour
1/2 cup of garbanzo bean flour
1/3 cup of unsweetened applesauce
1 cup of raw sugar
1 cup of brown sugar
1 cup of earth balance butter
2 tbsp of cinnamon
3 tbsp of almond butter
1/4 cup of chocolate chips (I use enjoy life brand)
1 tsp of baking powder

If you don't have butter, substitute the butter with three very ripe, small bananas.  Mash the bananas well or put in your food processor.  The cookies will have a banana flavor but if you don't mind that, you can save calories by not using butter.  If you're using the bananas, you don't need to use the 1/3 cup of applesauce.


Combine the flours, sugars and baking powder and mix well. Add the rest of the ingredients and mix until it's a thick cookie dough. Using a tbsp measuring spoon, put cookie dough on your cookie sheet (you should use two cookie sheets). If you want more cookies, use a smaller measuring spoon. Bake at 375 for 20 minutes. Check to make sure the cookies are done in the middle but don't wait for then to turn brown. Serve immediately! There is nothing better than warm cookies right out of the oven.
