Chocolate Chip Pancakes


My whole life in the kitchen this week is Italian food; I'm working on my cookbook full time. But I did have time to make these awesome chocolate chip pancakes so what better day than Friday to write out this yummy recipe. I use Enjoy Life vegan chocolate chips, which are insanely yummy. These pancakes can be made in your food processor and poured right into your skillet; they take minimal time to prepare so this is a great breakfast for rushed mornings.


Chocolate chip pancakes:
1 cup of rolled oats
3/4 cups of nondairy milk
1 ripe banana, sliced
1 tsp of baking powder
1 tbsp of vanilla protein powder
2 tbsp of chocolate chips

Put all ingredients in your food processor except the chocolate chips. Blend well. Pour the batter into a bowl and stir in the chocolate chips. Spray oil in a skillet and pour the batter in. Wait for the pancakes to bubble on top and then flip over. This batter makes about 4 medium pancakes. I poured agave on them (because I ran out of syrup) and they were so awesome.

You can get creative with what you put in your pancakes batter: pumpkin puree, peanut butter, chia seeds, pancakes are so awesome when you dress them up. For new vegans, there is a nondairy butter called Earth Balance that is yum if you are used to butter on your pancakes.
