Strawberry Banana Vanilla Overnight Oats


Ugh I'm not running my 10 mile run today because my calf muscle and achilles still hurt...I'm dying! I can't look at anymore running pictures because I'm so sad! It's so frustrating when your body won't heal as quickly as you want it to. I love running. It makes me feel like a superhero, my legs can really tight and I get this crazy energy. So, I know by not running today that I will get better faster so I can start running again but a part of me thinks I should have tried to run. I ran a mile on the treadmill yesterday and it was starting to hurt so I made the decision to give my bib away. Goodluck to all the Broad Street runners, I envy you and you are awesome!


Last night I made few mason jars of overnight oats because I made almond milk and I needed to use up my oat milk. This morning I had strawberry banana oats and they were yum. I also made chocolate peanut butter banana and a vanilla fig jar. I'm on the hunt for new and interesting fruit to try. I'm still gearing up for a fully raw May. I'm going to go full steam ahead with fruit, smoothies, salads and overnight oats this week. I'll be posting recipes! Colorful recipes!

Strawberry banana vanilla oats:
1/2 cup of rolled oats
1 1/2 cup of almond milk
1 scoop of vanilla protein powder
6 strawberries, pureed
1 banana, sliced

You can use a mason jar or bowl for overnight oat recipes. I love mason jars, they are wondeful to take on the go.
Pour the oats and milk into the jar and mix. Mix in the protein powder. If you're using a mason jar, put the lid on it and shake it up. Put the strawberries in your food processor and process on high until the strawberries are pureed. Add the pureed strawberries to the oats and stir. Lastly, slice up a banana and add to the jar. Put the lid on the jar and refrigerate overnight.
I'll post the other recipes this week. You can add flaxseed meal and chia seeds to this smoothie also.
