Beet Banana Smoothie


I woke up upset because I pulled my calf muscle last night during my run and now it's unclear whether or not I'll be able to do my 10 mile run this weekend. I'm trying not to think about it while I ice, wrap and elevate my leg. I'm hobbling around at work and now this rainy weather makes me want to be home snuggling on the couch. I'm keeping a positive outlook for Sunday. Needless to say I won't be doing anymore practice runs this week. *Note* I had to sit out this run after all but I turned a negative into a positive by writing about my experience and MindBodyGreen published my article on their website here 


This smoothie made me smile today. Beets are sweet and delicious and nutritious. I buy mine at Trader Joe's- they are already peeled and ready to eat. Grab some organic beets next time you're out. You can bake them, put them in smoothies, juice them, lots of ways you can use them.

Beet banana smoothie:
4 small beets
1 container of soy yogurt
1 frozen banana
Filtered water
2 scoops of vanilla protein powder

Blend everything on high. Add the filtered water to dilute the smoothie. Pour in your favorite glass. I didn't add anything to mine as far as toppings go. If you don't use or have protein powder, add a little bit of vanilla extract and 2-3 pitted medjool dates or 2 tbsp of maple syrup to increase the sweeteness.

I ran out of protein powder so I quickly placed an Arbonne order this morning. I ordered more protein powder, some omega supplements and hair and skin care stuff. While I'm waiting for that, I'm going to branch out from the breakfast smoothies and make some different dishes. I also need to stock up on bananas.
