Peach/mint iced tea

I really admire Alicia Silverstone for her veganism. She wrote The Kind Diet and has a website called the kindlife.com and works tirelessly to advocate for animals that are suffering. I would love to meet her and have a chat about her recipes and her work campaigning for a cleaner environment. Anyway, this iced tea recipe is also from her cookbook. I want to branch out and experiment with my own iced tea recipes inspired by the kind diet. I'll be passing those on next week. I want to get some more fruit at the store and check to see how my herbs are growing :) Decaf iced tea is a yummy way to stay hydrated over the summer without worrying about getting too much caffeine. Just stick with green tea bags which are naturally decaffeinated. I will be using my juicer for this recipe like I did for the pomegranate/lime recipe. You should invest in a juicer if you can. It's great for a morning cup of juice, tea, soup etc. Here is what you will need for peach/mint tea:
6 green tea bags
4 ripe peaches
1 small bunch of fresh mint
Maple syrup to taste (optional)
Boil water and immerse the tea bags for 5-10 minutes. Pit and juice the peaches. Pour the tea in a pitcher filled with ice cubes. Stir in the peach juice. Add mint leaves. Add a little at first and let sit. Taste and add more as you like. Add the maple syrup, stevia, any sweetener that you like, just avoid white, powdered and brown sugar if you can. I don't think raw sugar will dissolve in cold beverages either. Enjoy on a hot summer day :)
