Date Night!


It's been so long since I've posted and I'm going to dive right in with my new favorite food...dates!  I'm going to start a whole foods cleanse at the end of this week so I'll be posting recipes of dishes that only include fresh, organic whole foods with no processing, no sugar and no white flour.  I'm also a smoothie queen, especially since I've started running long distances. 

Anyway, this Saturday I'm going over my friend's house to hang out and eat her delicious homemade middle eastern dinner.  She loves cooking and always cooks vegan for me so I'm excited to see her fabulous presentation.  I told her I would bring the dessert so after researching middle eastern desserts, I decided I will be bringing stuffed dates covered in coconut flakes.  After pitting the dates, you stuff them with almonds (or another nut of your choice) and then coat them with either powdered sugar or coconut-I'll do coconut since it's a little healthier.  The above picture are of the dates I bought at whole foods.  They are in the produce section and they are so delicious.  Lately, I've been eating them with my homemade granola (recipe in a few) and soy yogurt.  Such a delicious and nutritious breakfast.  Dates are full of potassium and fiber and are easily digestible.  My next goal: date sugar!
