Spinach Bites

My mom used to make spinach bites all the time when I was a kid, usually just for the holidays, and we devoured them. She made them with egg and butter so they were definitely not vegan friendly. This Thanksgiving, we made them vegan and they turned out so awesome.

How To Add Greens to Every Meal

I swear my skin looks better when I push the greens. Any inflammation or redness always seems to go away when I load up on the kale or spinach. It could just be my imagination or the body healing itself but I am convinced the vitamins and antioxidants in greens are responsible for my skin improvement. And even if that isn't true, you can't ever go wrong eating kale. Besides, it's delicious and an incredible tasty addition to your meal. I love eating greens with a little sea salt and lemon juice sprinkled on them-especially kale. I love adding spinach to my buddha bowls. Greens are healthy and yummy and you can dress them up or just eat plain. It's just that, you can't open up your cupboard and grab some spinach; it has to be steamed and prepared in some way. Baked Butternut Squash with Kale and Pecans {Thanksgiving Recipe}

I bought a butternut squash at the farmers market on Saturday with the intention of baking it, which I finally got around to doing. All of these Thanksgiving dishes are giving me some major inspiration to make something seasonal and warm and delish. So here goes! Let me tell you about my Thanksgiving plans for the last two years. I always have big ideas about making a ton of meatless dishes along with a ton of awesome desserts but I live in NYC and my family lives in the Philly burbs. So, it's difficult to travel home the day before Thanksgiving, run out and get ingredients and make a bunch of food. My mom's oven only holds so many dishes so it can be tricky. But this year, I think I'll be able to sneak this dish in there 😄

Vegan Thanksliving

I am having a wonderful Thanksgiving break at home here in the Philly burbs.  I spent awesome time with family and friends thus far and I still have two days here.  Wednesday afternoon we had some snow in the area and I was afraid I wouldn't get home until late or there would be so many delays that I would be so frazzled once I got home but my bus ride was quick and painless.  I got into Philly late Wednesday and then went right to my mom's for Thanksgiving breakfast Thursday morning so I didn't have time to make any dishes for Thanksgiving dinner.  As disappointed as I was, I will be making up for it at Christmas time!  Raw pumpkin pie and cupcakes here I come!
