For the soup, I used filtered water and spices for the broth and added a ton of veggies and some cannellini beans. My first dish was a pasta dish, I used the broth in place of oil and by the end of the cooking time, the broth was absorbed into the veggies. I used peanut sauce for both recipes.
Rice noodles with veggies and peanut sauce:
2 oz of dry rice pasta
Leftover soup including broth
3 cloves of black garlic (explanation below)
2 tbsp of peanut butter
2 cloves of fresh raw garlic
2 tsp of powdered ginger
Juice from 2 lemon slices
Filtered water to thin it out
Drain the pasta and combine it with the veggies. Pour over the peanut sauce and enjoy!
Black garlic is fermented garlic. I found it at Trader Joe's and I'm not looking back. It's less potent in taste than raw garlic but it's supposed to be twice the antioxidant power. I've never seen it at TJ's before so I'm not sure if it's everywhere but I saw it at the West Side NYC Trader Joe's. Once I see it again, I'm going to stock up on it! It's got a sweet, not bitter taste and it's an awesome addition to dinner. It looks pretty unappetizing but I assure you it's yum.
Prepare the rice according to the package. Prepare the peanut sauce and veggies as above.
Awesome stuff. Two fabulous dinner ideas. These are also great dinner ideas if you're trying to clean out your fridge and use up veggies before they spoil. I used brussel sprouts and a yellow pepper to make tonight's rice because I used all my leftover soup for the pasta recipe yesterday. Make fresh garlic a staple when you're making a veggie stir fry. Also, try the fermented garlic if you can find it.
