It's meatless Monday! Even if you're not vegetarian or vegan, you can still cut meat out of your diet today. Meatless Monday is a great way to start changing your diet to vegetarian if you want to begin changing what you eat. You will not only feel better when you cut meat out of your diet, but you can also save approximately 189 animals per year by going veg. And don't let anyone tell you that you need meat to get your iron, leafy green veggies have plenty of iron in them. So, today is a great day to start a veg lifestyle! I am here to give you any advice that I can based on my experience :) Tonight I'm either going to have pasta with my homemade gravy or a kale "chicken" salad. Today's meatless Monday dish is going to be the kale "chicken" salad. You will need:
1 fake chicken patty (morningstar makes them, you can find them with the veggie burgers)
Kale and lettuce of your choice (I love romaine)
Brown rice pasta
Organic slaw (trader Joe's)
Any additional veggies you love. Clean out your fridge and just keep adding veggies to this salad.
Almonds
Lupini beans
Olive oil
1 lemon
Pepper and sea salt
Dressing: pour 2 tbsp of olive oil in a container with a lid and add 1/2 of a fresh lemon. Sprinkle some pepper and a tiny bit of sea salt in the dressing. Shake the container and taste. If you need more lemon juice, squeeze some more in there. Shake and taste.
Heat the chicken patty and then after it cools down, cut it into small pieces. Boil water to make the pasta- I used Trader Joe's brown rice penne pasta. Shell the lupini beans and rinse with cold water. Combine the veggies, pasta, beans, almonds and chicken into a medium bowl and toss. Add the dressing and keep mixing the salad ingredients until the dressing covers everything. Enjoy! You get your chicken fix, your carb fix (pasta) and you have lots of fresh veggies in the salad.
Note: if you're looking to lose weight, cut out the chicken and/or pasta. Or half the chicken patty and/or half the serving of pasta. You can still get protein from the beans. And lupini beans are low in calories.
