The vegan Instagram community is completely amazing. The recipes, the love, the friendship, the healthy lifestyle tips, it's all there. I stumbled upon this cranberry applesauce recipe and rushed to make it right away since I had a bag of organic cranberries and no idea what to do with them. The tartness of cranberries makes them unsuitable for eating them raw so this is a perfect recipe.

Cranberry applesauce:
1 bag of organic cranberries
2 organic apples, chopped
1/4 cup of organic apple cider vinegar
1/2 cup of coconut sugar
1 tsp of vanilla extract
1 tsp of cinnamon
2 organic apples, chopped
1/4 cup of organic apple cider vinegar
1/2 cup of coconut sugar
1 tsp of vanilla extract
1 tsp of cinnamon
In a large pot, put the cranberries, chopped apples, sugar, vanilla, vinegar and cinnamon and turn the heat on low. Cover and let simmer until the cranberries and apples are soft.
Once the fruit is soft, stir the mixture again and taste. Serve with dinner or you can put this on oatmeal. The sugar and vinegar compliment each other perfectly. You can mash the fruit before serving or leave as is.
For oatmeal, I heated a 1/2 cup of oats and 1 cup of lemon water in a small pot and simmered until the oats soaked up most of the water. Transfer the oats to a bowl and pour the cranberry applesauce on top of the oats. The oats are ready to eat like this!
