Miso Salad Dressing


Tonight for dinner I had a pretty awesome salad and I was able to ditch the oil and use miso for the dressing. Miso is amazing; we are learning in IIN that soy in its natural form is full of protein, fiber and amazing nutrients. Miso is an excellent example of this and it also has many healing properties, it strengthens the immune system and fights cancer. Miso is a dark paste made from rice or barley. It's very salty so a little goes a long way. Miso and umeboshi paste: two amazing foods I was introduced to while reading The Kind Diet by Alicia Silverstone.


Miso dressing: 1/2 tbsp of miso paste, juice from 1/4 of a lemon, powdered ginger and filtered water. Mix everything together until the miso paste is completely absorbed. Pour over your salad.
Salad ingredients: 1/2 avocado, a few romaine lettuce leaves, 1/2 bag of organic salad greens, 1 rice cake cut into small pieces, 1/4 cup of garbanzo beans, 1/2 cup of kidney beans, nutritional yeast.
Combine all ingredients, add the miso dressing and sprinkle with nutritional yeast. Very delish!
