Chocolate Peanut Butter Strawberry Chia Seed Pudding


What a decadent dessert....or breakfast.  For me, it's usually breakfast.  This is healthy, sweet and filling and will satisfy anyone's sweet tooth.  I love making breakfast the night before because I can get up and not have to worry about breakfast.  It's also fun to look forward to a great breakfast in the morning.  Chia seeds are amazing.  They have omegas, fiber and protein, they give you energy and are perfect for before a workout or for breakfast. 


One question I got yesterday on Instagram was how do you get the chia seeds to swell enough so you get a pudding consistency.  You want to add enough chia seeds to milk so that the chia seeds absorb most of the milk to make a thick pudding.  Coconut milk is a thicker milk and makes the best pudding but even if you don't have that, any non dairy milk will do.  For a pudding consistency, I usually add 1/2 cup of milk to 1 tbsp. of chia seeds.  Or 1 cup of milk to 2 tbsp. of chia seeds.  If you're adding protein powder or cacao powder, these will also absorb some of the milk.  If you're using 1/2 cup of canned coconut milk to 1 tbsp. of chia seeds, this will thicken into a pudding almost immediately.  If you want only a little bit of pudding (to satisfy a sweet tooth), add 1/4 of canned coconut milk to a mason jar and mix in 1 tbsp. of chia seeds and some chocolate protein powder.  It's perfect for a sweet craving!

So, onto the recipe!

Chocolate peanut butter strawberry chia seed pudding:
1 cup of almond milk
2 tbsp. of chia seeds
4 fresh or frozen strawberries
1 scoop of chocolate protein powder (or cacao powder + 2 tbsp. of agave nectar)
2 tbsp. of peanut butter

I make my chia seed pudding in a mason jar.  Add the milk, chia seeds and protein or cacao powder/agave to the jar and mix well.  Add in the strawberries either cut into small pieces or whole.  If you're using frozen strawberries, run them under warm water first and then add them.  Add the peanut butter last, put the lid on the jar and refrigerate overnight.  Enjoy the next day.  If you're making a snack, refrigerate for about 4 hours then enjoy.

You can substitute any berries or a banana in this recipe. 

Raw recipe: 1 cup of homemade almond or oat milk, 2 tbsp. of chia seeds, 2 tbsp. of cacao powder, 2 dates and a fresh banana cut up, homemade almond butter.  You can cut up the dates and banana or puree them in your food processor and add the puree; the fruit is the sweetener.

Add the milk, chia seeds and cacao powder to a mason jar and mix well.  Add the fruit whole or the fruit puree and mix.  Add the almond butter last.  Cover and refrigerate.
