It's a boardwalk meal!

Another yummy vegan treat that will make you feel like you're on the boardwalk on a balmy summer night: sweet potato fries. I make these everytime I'm jonsing for "junk food". I make them with olive oil and lemon pepper but you can top them with anything you desire. Sometimes I brush olive oil on them but last night I used my olive oil spray.

1 sweet potato, cut in slices, thin or thick or however you enjoy fries
Place in a baking pan or on a cookie sheet but first spray the cookie sheet with olive oil
Arrange the fries on the cookie sheet
Top with olive oil and seasoning, I use lemon pepper or sea salt.
Put in the oven at 350 degrees for about 20-25 minutes or longer if you like your fries soft
Voila! They are done :) Dip in ketchup when eating...
I eat them with a veggie burger and that's my burger and fries meal. I usually buy the Boca vegan veggie burgers but I'm also going to try Amy's California veggie burgers
I cook the veggie burger in my small pink pan in olive oil and I put lemon pepper on it. I also throw in some onions and top with spinach or a tomato. The more spices and topping, the better. I also top it with mustard or spread some hummus on the hamburger roll. It's such a yummy dinner and it hits the spot. Veggie burgers are full of fiber and protein and are a great substitute if you're all about the beef.
