I'm all about cookie sandwiches ever since I tried one at Sweet Freedom Bakery (www.sweetfreedombakery.com). So, I decided to make cookie sandwiches at home and they turned out fabulously.
Cookies
3/4 cup of vegan butter
1/2 cup of brown sugar
1/2 cup of agave nectar (or vegan granulated sugar)
1 cup of whole wheat flour
1 tsp of vanilla
1/2 cup of almond (or soy) milk
1 cup of oats
2 tsp of baking powder
chocolate chips (optional)
Combine the butter, sugar, vanilla and agave nectar, mix well, add the milk, stir then add the flour, baking powder and oats. The mix will be thick. Scoop the mix onto the cookies sheets in small to medium portions so that the cookies aren't huge. Bake at 350 degrees until the middle of the cookie is done. Cool on a cookie rack. Match up cookies in pairs based on their size.
Icing:
vegan butter
confectioner sugar
almond milk
Scoop some vegan butter and sugar in a bowl and stir. Stir in a little bit of the milk. You will have to keep playing with all the ingredients to make the icing the way you like it. I like thick icing so I add more sugar and very little milk. After the cookies are totally cool, spread the icing on a cookie then put another cookie on top.
